Honestly, change is a hurdle I sometimes find incredibly difficult to overcome. I won’t lie, my comfort zone is a cherished place.

So, when my husband, Tom, announced, “It’s time to see the world and start crossing places off our bucket list,” I knew a significant shift was on the horizon. My heart began to race. And then came the kicker: “Let’s do it in a camper.” My immediate thought? Yikes! Visions of cramped spaces and endless road food flashed before my eyes.

But you know what? This particular change, daunting as it initially seemed, has turned out to be incredibly good. I’m not just adapting; I’m embracing it wholeheartedly. We are having the absolute time of our lives, discovering the joy of spontaneous travel and the beauty of simplicity.

Just a few weeks ago, we meticulously packed up our beloved Airstream and set off on an unforgettable journey. The very first destination on our eagerly anticipated list? The breathtaking state of Maine! As soon as we crossed the state line, a sense of anticipation and wonder enveloped us, a feeling I hadn’t experienced in years.

If Maine isn’t already gracing your travel bucket list, I cannot emphasize enough how strongly I encourage you to add it. It truly exceeded every expectation I had and more. From its rugged coastline and charming lighthouses to its vibrant maritime culture and, of course, its world-famous lobster, Maine offered an experience that was both invigorating and deeply peaceful.

Our home base in Maine was Camden, a truly picturesque town nestled right near Mount Battie within Camden Hills State Park. Imagine this: a mere five-minute drive from our campsite led us to the most quaint and idyllic downtown area I have ever encountered. Situated perfectly on the shimmering Penobscot Bay, Camden was like a scene plucked from a postcard, with its historic architecture, vibrant harbor, and welcoming atmosphere.

Our days were filled with a delightful array of activities. We savored delectable meals at fabulous local restaurants, browsed unique art galleries showcasing regional talent, and enjoyed a bit of retail therapy in charming boutiques. The active side of Maine called to us too, with invigorating hikes through scenic trails, exhilarating bicycle rides along the coast, and peaceful boating excursions on the bay. And when we weren’t exploring, we relished the simple pleasure of unwinding around a crackling campfire back at our serene campsite, sharing stories and soaking in the tranquil surroundings. The fresh, crisp Maine air and the scent of pine and sea salt created an ambiance of pure relaxation.

We embarked on several memorable short day trips, each revealing a new facet of Maine’s charm. We explored the artistic communities of Rockport and Rockland, discovering their unique maritime heritage and vibrant cultural scenes. A highlight was a peaceful ferry ride to the quiet, unspoiled island town of Vinalhaven, a place where time seems to slow down, offering a glimpse into authentic island life. But perhaps the pinnacle of our Maine adventure was a guided tour through the majestic Acadia National Park in Bar Harbor. This incredible experience was made even more special by our dear friends, Paul and Diane, who have been vacationing in Maine every summer for an astonishing 40 years! Their intimate knowledge of the park brought its breathtaking landscapes to life. We were utterly awestruck by Acadia’s dramatic granite peaks, pristine lakes, and rocky shorelines carved by the powerful Atlantic. It was, quite simply, absolutely breathtaking, a testament to nature’s grandeur.

This rich and creamy Hot Cheesy Lobster Dip is the ultimate appetizer, perfect for festive holiday gatherings or any special occasion.

Ingredients  

  • 4 Tbsp. unsalted butter
  • 1 cup red bell pepper, finely chopped
  • 1 cup shallots, finely chopped for delicate flavor
  • 3 cloves garlic, freshly minced
  • 4 Tbsp. all-purpose flour
  • 1 cup heavy cream
  • ¾ cup whole milk
  • 1 tsp. Old Bay Seasoning
  • 1 tsp. paprika
  • ½ tsp. dry mustard powder
  • ½ tsp. fine sea salt
  • ½ tsp. freshly ground black pepper
  • ¼ tsp. cayenne pepper
  • 2 Tbsp. cooking sherry
  • 1 cup Gruyere cheese, shredded (or substitute with cheddar, Monterey Jack, or Colby)
  • 2 cups cooked lobster meat, cut into delectable chunks
  • 2 tsp. dried parsley, plus extra for garnish
  • cup kettle cooked potato chips, lightly crumbled (salt and pepper flavor is highly recommended for an extra kick)

Instructions 

  • Preheat your oven to 350°F (175°C). Lightly spray a medium-sized casserole dish with nonstick cooking spray to ensure easy cleanup. Set the prepared dish aside.
  • In a large, heavy-bottomed saucepan, melt the butter over medium heat. Add the finely chopped red bell pepper and shallots to the melted butter and cook gently until they have softened, which should take approximately 3-5 minutes. Stir in the minced garlic and continue to cook for just 1 additional minute, being careful not to burn the garlic. Sprinkle the vegetable mixture evenly with the all-purpose flour and cook for 2 minutes, stirring constantly to create a roux. It’s crucial not to let the flour brown or burn, as this will affect the dip’s flavor and color.
  • Gradually whisk in the heavy cream and whole milk until the mixture is completely smooth and free of lumps. Add the Old Bay seasoning, paprika, dry mustard, fine sea salt, freshly ground black pepper, cayenne pepper, and cooking sherry. Reduce the heat to low and allow the mixture to gently simmer, stirring occasionally, until it begins to thicken, typically taking about 4-5 minutes. Once thickened, whisk in ½ cup of the shredded Gruyère cheese (or your chosen substitute) until it has fully melted and integrated into the creamy base. Carefully fold in the chunks of cooked lobster meat and the dried parsley until all ingredients are well combined. Pour this decadent mixture into your prepared casserole dish.
  • Sprinkle the remaining shredded cheese evenly over the top of the dip, followed by a generous layer of crumbled kettle-cooked potato chips. Bake in the preheated oven for 20 minutes, or until the dip is beautifully bubbly around the edges and lightly golden brown on top. Once baked, remove from the oven and let it stand for 5 minutes before serving to allow the flavors to meld and the dip to cool slightly.
