Why a Slab Pie is the Perfect Choice for Summer Gatherings

When it comes to feeding a crowd, especially during the warmer months, a slab pie is an ingenious solution. Unlike traditional round pies that often require delicate handling and can be tricky to serve efficiently to many guests, a slab pie is designed for simplicity and generous portions. Baked in a standard sheet pan, it offers a wider surface area for all those delicious toppings and allows for easy slicing into squares, making it ideal for picnics, backyard barbecues, family reunions, or any festive occasion. The sheer visual impact of a large, golden-brown pie brimming with fruit is enough to make it the star of any dessert table.

Forget the stress of rolling out a perfect round pie crust – with this recipe, you’ll simply press the dough directly into the bottom and slightly up the sides of your sheet pan. This method saves time and effort, making homemade pie more accessible than ever, even for novice bakers. The result is a wonderfully tender, buttery base that perfectly complements the vibrant fruit filling.

The Unbeatable Duo: Peaches and Blueberries

The marriage of sweet peaches and slightly tart blueberries is a match made in culinary heaven. Peaches, with their soft, fragrant flesh, bring a luscious sweetness that evokes sunny summer days. When combined with the tangy pop of blueberries, they create a balanced flavor profile that is both comforting and exhilarating. This delightful fruit combination is further enhanced by a hint of fresh lemon juice, which brightens the overall taste, and a touch of cornstarch to create a perfectly thickened, glossy filling. Spices like cinnamon and a pinch of salt are added to deepen the flavors, making every bite a complex symphony of summer tastes.

And let’s not forget the streusel! For those of us who adore that delightful crumbly topping, this pie delivers. My streusel recipe elevates the classic by incorporating standard streusel ingredients with the added crunch of roughly chopped pecans. This texture contrast against the soft fruit and tender crust is simply divine, adding another layer of indulgence to this already spectacular dessert.

Key Ingredients for Your Peach Blueberry Streusel Slab Pie

Crafting this magnificent slab pie relies on a selection of fresh, high-quality ingredients that come together to create an unforgettable dessert. Here’s a quick overview of what you’ll need:

  • For the Streusel: All-purpose flour, light brown sugar, granulated sugar, ground cinnamon, a pinch of salt, melted unsalted butter, and chopped pecans (or your preferred nuts).
  • For the Crust: Unsalted butter (at room temperature), all-purpose flour, confectioners’ sugar, ground cinnamon, and kosher salt.
  • For the Filling: Ripe peaches, fresh blueberries, light brown sugar, granulated sugar, fresh lemon juice, cornstarch, vanilla extract, ground cinnamon, and kosher salt.

This recipe yields approximately 15 generous servings, making it perfect for feeding a substantial crowd or ensuring you have plenty of leftovers to enjoy. It is truly exceptional when served warm, perhaps with a dollop of freshly whipped cream that slowly melts into the warm fruit, or a scoop of creamy vanilla ice cream that provides a delightful temperature contrast. Each bite offers a harmonious blend of textures and tastes – the tender crust, the juicy fruit, and the crunchy, spiced streusel.

I am confident that this Peach Blueberry Streusel Slab Pie will become a beloved staple in your home, just as it has in mine. Get ready to impress your loved ones and savor the delicious moments!

Helpful Cook’s Notes and Customization Tips

Here are a few tips to ensure your Peach Blueberry Streusel Slab Pie turns out perfectly every time, along with ideas for customization:

  • Fruit Substitutions: If fresh peaches are not in season or hard to find, nectarines make an excellent substitute. Their similar texture and sweetness work beautifully in this recipe. While fresh fruit is always preferred, you can use frozen fruit (peaches and blueberries) by thawing them first and draining any excess liquid to prevent a watery filling.
  • Nut Variations: Not a fan of pecans? No problem! Walnuts or sliced almonds can be easily substituted in the streusel topping for a different, yet equally delicious, crunch. You can also omit nuts entirely if you prefer a nut-free dessert.
  • Doneness Indicators: To ensure your pie is perfectly baked, look for a bubbly filling around the edges and a beautifully golden-brown streusel topping. A fruit pie is typically done when the filling has thickened and the crust is golden.
  • Cooling is Key: Allow the slab pie to cool on a wire rack for at least 30-60 minutes before slicing. This allows the filling to set properly, preventing it from being too runny when served. While delicious warm, patience will result in cleaner slices.

Instructions

Streusel

  1. In a medium bowl, combine all streusel ingredients and mix with a fork until well combined and crumbly. Set aside.

Crust

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10×15-inch rimmed sheet pan with nonstick cooking spray.
  2. Combine all crust ingredients (butter, flour, confectioners’ sugar, cinnamon, and kosher salt) in the bowl of a stand mixer fitted with a paddle attachment. Mix at medium speed until the mixture starts to come together into large clumps.

Filling

  1. In a large bowl, toss the peach wedges with brown sugar, granulated sugar, fresh lemon juice, cornstarch, vanilla extract, ground cinnamon, and kosher salt until the cornstarch is fully dissolved and the peaches are evenly coated.
  2. Gently fold in the blueberries.

  5. Remove the pie from the oven and evenly sprinkle the reserved streusel topping over the fruit filling.
  6. Continue to bake for an additional 20 minutes, or until the filling is visibly bubbly and the streusel is lightly browned and crisp.
  7. Remove the pie from the oven and allow it to cool completely on a wire rack before slicing. Serve warm with fresh whipped cream or vanilla ice cream, if desired.

Notes

  • If you can’t find peaches, you can substitute nectarines for this pie.
  • If you’re not a fan of pecans, you can substitute walnuts or sliced almonds in the streusel.
