Ingredients

  • Pickled Red Onions, (see recipe link above)
  • 1 (15.5-oz.) can black beans, rinsed and drained
  • 1 (15.25-oz.) can whole kernel corn, drained, or fresh corn
  • 20 oz. grape tomatoes, halved
  • 1 cup Cotija cheese, crumbled
  • 2 heads romaine lettuce, shredded

Instructions

  1. Combine the corn and black beans in a medium bowl. Set aside.
  2. Add some shredded romaine to the bottom of each bowl. Top the romaine with some of the honey chipotle chicken, the arroz verde, some pickled red onions, about 1/4 cup of the Cotija cheese, some of the corn and black bean mixture and the grape tomatoes. Serve immediately.
