Ingredients

  • 1 Tbsp. canola oil
  • 1 cup Vidalia onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large peaches (one cup), peeled and cut into 1/2 inch cubes
  • 2 cups ketchup
  • 1/2 cup firmly packed brown sugar
  • 1 cup peach preserves
  • 3 Tbsp. apple cider vinegar
  • 1 tsp. ground ginger
  • 1 1/2 tsp. ground black pepper
  • 1 tsp. kosher salt
  • 1 Tbsp. honey
  • 2 Tbsp. butter, cut into small cubes

Instructions

  1. Heat canola oil in a medium saucepan over medium heat. Add onion and cook, stirring occasionally for 5 minutes, until translucent. Stir in the minced garlic and cook for an additional 2 minutes until fragrant.
  2. Add the cubed peaches to the saucepan and continue to cook for 3-5 minutes, or until they have softened slightly.
  3. Next, incorporate the ketchup, brown sugar, peach preserves, apple cider vinegar, and ground ginger into the mixture. Stir well to combine all ingredients.
  4. Reduce the heat to low and allow the sauce to simmer gently for 30 minutes, or until it has thickened to your desired consistency. Remember to stir occasionally to prevent sticking and ensure even cooking.
  5. Carefully transfer the mixture in small batches to a blender. Puree until smooth, or leave a few peach chunks for a more rustic texture, as shown in the photos. Return the pureed mixture to the saucepan.
  6. Stir in the ground black pepper, kosher salt, and honey. Add the butter, cut into small cubes, and stir until it has completely melted into the sauce, enriching its flavor and texture.
  7. Remove from heat and allow the Peach Barbecue Sauce to cool completely to room temperature before serving.
  8. For optimal flavor, you can prepare this sauce a few days in advance. Store it in a clean, airtight glass jar in the refrigerator, where the flavors will continue to meld and deepen.
