Ingredients  

  • 1 cup white rice
  • 1 lb. hot Italian sausage, removed from casings
  • 2 Tbsp. butter
  • 1/2 cup yellow onion, chopped
  • 8 oz. baby bella mushrooms, sliced
  • 1 4-oz. can chopped green chiles, undrained
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 cup cheddar jack, shredded

Instructions 

  • Preheat oven to 350 degrees F (175 C). Lightly spray a 2-quart baking dish with nonstick cooking spray and set aside.
  • Cook white rice according to the package directions. Once cooked, remove from heat and set aside to cool slightly.
  • In a large skillet, heat over medium-high heat. Add the hot Italian sausage (removed from casings) and cook, stirring frequently with a wooden spoon to break up the sausage, until it is thoroughly browned and no longer pink inside. Using a slotted spoon, transfer the cooked sausage to a bowl, leaving any rendered fat in the skillet. Drain excess fat from the skillet.
  • Return the same skillet to medium-high heat. Add the butter and melt. Once melted, add the chopped yellow onion and sliced baby bella mushrooms. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened. Stir in the chopped green chiles (undrained) and minced garlic, and continue to cook for just one more minute until fragrant.
  • Pour in the chicken broth and heavy cream. Stir until all ingredients are well combined. Bring the mixture to a gentle simmer and cook for approximately 7-10 minutes, allowing the sauce to thicken slightly and flavors to meld. Add 3/4 cup of the shredded cheddar jack cheese and stir until the cheese is completely melted and incorporated into the sauce. Finally, add the cooked sausage and the prepared rice to the skillet. Mix thoroughly until everything is evenly combined. Pour the entire mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup of shredded cheese evenly over the top.
