- 4 Tbsp. butter, divided
- 1 small yellow onion, chopped
- ¾ cup celery, chopped
- ¾ cup carrots, chopped
- 2 cloves garlic, minced
- ⅓ cup all-purpose flour
- 1 Tbsp. Tony Chachere’s Original Creole seasoning
- 1 Tbsp. fresh thyme leaves
- 1 4-oz. jar diced pimentos, drained
- 4 cups low-sodium chicken broth
- 1 ½ cups milk
- 2 cups cooked white rice
- 2 cups shredded rotisserie chicken
Instructions
- In a large Dutch oven or heavy-bottomed pot, melt 2 tablespoons of butter over medium heat. Add the chopped onions, celery, carrots, and minced garlic to the pot. Cook, stirring frequently, for 8-10 minutes, or until the vegetables have softened and become aromatic.
