Why This Horseradish-Honey Mustard Glaze Brussels Sprouts Recipe Will Be Your New Favorite

This recipe isn’t just another side dish; it’s a revelation, and it all comes down to the star of the show: the extraordinary glaze. If you consider yourself a fan of Brussels sprouts, or even if you’re on the fence, this unique horseradish-honey mustard glaze is about to change your perception entirely. Its exquisite balance of flavors – a delicate sweetness from the honey, a bold kick from the horseradish, and a tangy depth from the coarse-grain mustard – creates an unforgettable taste sensation that perfectly complements the earthy notes of the sprouts.

What makes this glaze even more appealing is its incredible simplicity. Crafted from just three core ingredients, it’s astonishingly easy to whip up, transforming a humble vegetable into something truly gourmet. But let’s be honest, no matter how delicious a glaze is, everything is undeniably better with bacon! The addition of crispy, savory bacon bits elevates this dish to an entirely new level, adding a textural contrast and an irresistible smoky richness that perfectly rounds out the sweet and spicy elements of the glaze. It’s a flavor combination that’s simply impossible to resist, making this side dish a guaranteed crowd-pleaser for any meal or occasion.

Essential Ingredients for Your Flavorful Brussels Sprouts

Crafting these delectable roasted Brussels sprouts requires only a handful of readily available ingredients. The magic happens when these simple components come together to create a complex and satisfying flavor profile. Here’s what you’ll need to gather:

  • Fresh Brussels Sprouts: Look for firm, bright green sprouts without blemishes. Trimming the ends and halving them ensures even cooking and allows the glaze to penetrate beautifully.
  • Olive Oil: A good quality olive oil is essential for roasting, helping the sprouts achieve that desirable tender-crisp texture and a slight caramelization.
  • Salt and Pepper: Basic seasonings that enhance the natural flavors of the Brussels sprouts during roasting.
  • Honey: Provides the perfect touch of natural sweetness to balance the heat of the horseradish and the tang of the mustard in the glaze.
  • Prepared Horseradish: This is the secret ingredient that gives the glaze its distinct spicy kick and aromatic depth. Ensure you use prepared horseradish, not horseradish sauce, for the best flavor.
  • Coarse-Grain Mustard: Adds a wonderful tangy texture and a robust, earthy mustard flavor to the glaze, complementing the honey and horseradish.
  • Bacon: Crispy, savory bacon bits are the ultimate crowd-pleaser, bringing a smoky, salty counterpoint to the sweet and spicy glaze.

With these fresh ingredients in hand, you’re well on your way to creating a truly memorable side dish.

Step-By-Step Guide to Perfectly Roasted Brussels Sprouts with Horseradish-Honey Mustard Glaze

Creating this incredible side dish is straightforward and incredibly rewarding. Follow these simple steps to achieve perfectly roasted Brussels sprouts coated in an unforgettable glaze:

Step 1: Prepare and Roast the Brussels Sprouts

Begin by preheating your oven to a robust 425°F (220°C). This high temperature is key to achieving beautifully caramelized and tender Brussels sprouts. Wash your Brussels sprouts thoroughly, then trim any tough ends and remove any loose outer leaves. Halve the sprouts through their core. Arrange the prepared Brussels sprouts in a single layer on a large baking sheet, ensuring they have enough space to roast without steaming. Drizzle them generously with olive oil, then season with salt and freshly ground black pepper to taste. Toss gently to ensure they are evenly coated. Place the baking sheet into the preheated oven and roast for 15-20 minutes, or until the sprouts are fork-tender with deliciously crispy, slightly charred edges. Roasting brings out their natural sweetness and nutty flavor, making them utterly irresistible.

Step 2: Cook the Crispy Bacon

While your Brussels sprouts are roasting in the oven, it’s the perfect time to prepare the bacon. Dice your bacon slices into small, even pieces. Place the diced bacon in a small skillet and cook over medium heat. Stir occasionally, allowing the bacon to render its fat and crisp up beautifully. This usually takes about 5-8 minutes, depending on the thickness of your bacon. Once the bacon pieces are golden brown and wonderfully crisp, remove them from the skillet using a slotted spoon. Transfer the crispy bacon bits to a plate lined with paper towels to drain any excess grease. This step ensures your bacon remains delightfully crunchy when mixed with the sprouts and glaze.

Step 3: Prepare the Horseradish-Honey Mustard Glaze

Now for the star of the show – the exquisite glaze! In a small saucepan, combine the prepared horseradish, honey, and coarse-grain mustard. Whisk these three ingredients together thoroughly until they are well combined and smooth. Place the saucepan over medium heat and gently warm the glaze for 5-7 minutes, stirring frequently. The goal is to thoroughly heat the mixture and allow the flavors to meld beautifully, creating a harmonious sweet, spicy, and tangy profile. Be careful not to let it boil vigorously; a gentle simmer is sufficient to warm it through and achieve the perfect consistency.

Step 4: Combine and Serve

Once your Brussels sprouts are perfectly roasted and tender, carefully remove the baking sheet from the oven. Transfer the warm roasted Brussels sprouts to a large mixing bowl. Add the crispy bacon bits and pour the warm horseradish-honey mustard glaze over the sprouts and bacon. Toss everything gently but thoroughly, ensuring that every sprout and every piece of bacon is beautifully coated in the glistening, flavorful glaze. Serve immediately to enjoy this dish at its best, when the sprouts are warm, the bacon is crisp, and the glaze is perfectly vibrant. This harmonious blend of textures and tastes creates a truly memorable side dish.

Embracing the Brussels Sprout: A Vegetable Reimagined

I must confess, I have a profound affection for Brussels sprouts, yet I often feel they don’t receive the widespread recognition they truly deserve. For too long, these miniature cabbages have been unfairly maligned, often relegated to the category of “disliked vegetables.” However, I’m here to champion their cause, especially when they’re prepared in a way that truly unlocks their potential.

Beyond their delightful taste when properly cooked, Brussels sprouts are nutritional powerhouses. They are remarkably high in protein for a vegetable, surprisingly low in calories, and just one serving can provide your entire daily requirement of Vitamin C! They’re also packed with Vitamin K, fiber, and potent antioxidants, making them an excellent choice for a healthy diet. The key, as with many vegetables, lies in how you “dress them up” – transforming them from merely healthy into undeniably delicious.

Roasting is arguably the best way to prepare Brussels sprouts. This method coaxes out their inherent sweetness, softens their texture, and develops a rich, nutty flavor, often accompanied by irresistible crispy outer leaves. But in this particular recipe, it’s the dynamic interplay of the glaze that truly elevates them. The bold, piquant spice of horseradish, the comforting sweetness of honey, and the zesty tang of coarse-grain mustard come together in a symphony of flavors that perfectly complements the roasted sprouts. And, of course, the grand finale – the addition of crispy, savory BACON – is a guaranteed crowd-pleaser that catapults this delicious side dish straight to the top of everyone’s favorites list! This recipe isn’t just about eating your greens; it’s about falling in love with them.

These horseradish-honey mustard glazed Brussels sprouts with bacon are an absolutely perfect addition to any meal, especially ideal for the upcoming holiday season. They offer a refreshing and flavorful alternative to traditional side dishes, promising to be a highlight at your festive table. I sincerely hope they earn a coveted spot on your holiday menu this year!

Pro Tips & Cook’s Notes for Perfect Roasted Brussels Sprouts with Horseradish-Honey Mustard Glaze

To ensure your Brussels sprouts turn out perfectly every time, here are a few additional tips and insights:

  • Oven Variability: Remember that every oven is unique. While I recommend roasting your Brussels sprouts at 425°F (220°C) for approximately 15-20 minutes, keep a close eye on them. The goal is fork-tender sprouts with beautifully caramelized edges, not mushy or burnt ones. Adjust roasting time as needed based on your oven’s performance and the size of your sprouts. For reference, mine were perfectly done after about 20 minutes.
  • Prepping Brussels Sprouts: For optimal flavor and texture, ensure your Brussels sprouts are trimmed and halved uniformly. This allows for even roasting. If you have very large sprouts, you might even quarter them.
  • Don’t Overcrowd the Pan: For crispy sprouts, it’s crucial not to overcrowd your baking sheet. If you have a large batch, use two sheets or roast in batches. Overcrowding will steam the sprouts instead of roasting them, preventing that desirable crispiness.
  • Glaze Consistency: If your glaze appears too thick, you can add a tiny bit of water (about half a teaspoon at a time) while warming it, whisking until it reaches your desired consistency. If it’s too thin, a quick simmer for another minute or two can help reduce it slightly.
  • Bacon Fat Option: For an extra layer of flavor, consider drizzling your roasted Brussels sprouts with a small amount of the rendered bacon fat before adding the glaze. This adds an incredible depth of savory taste.
  • Mustard Choice: My personal favorite coarse-grain mustard is Inglehoffer’s Original Stone Ground Mustard. It provides the perfect balance of tang and texture for this glaze. (This isn’t a sponsored mention, just a recommendation for a product I genuinely enjoy and find works wonderfully in this recipe!)
  • Storage & Reheating: Leftover Brussels sprouts can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, spread them on a baking sheet and warm in a 350°F (175°C) oven for about 10-15 minutes to help restore some crispiness. Microwaving is also an option, but they may lose some of their texture.
