These Strawberry Jam Crumb Cookies are the new FOMO cookies! Inspired by classic crumb cake, these cookies are totally irresistible!

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup light brown sugar, firmly packed
  • 3 tbsp. granulated sugar
  • 1 ½ tsp. ground cinnamon
  • ¼ tsp. salt
  • 12 tbsp. unsalted butter, melted and cooled
  • 1 cup strawberry jam

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly spray an 8-inch tart pan with a removable bottom with nonstick cooking spray.
  2. In a medium bowl, combine flour, brown sugar, granulated sugar, cinnamon, and salt. Stir in the butter slowly with a fork until just crumbly. For best results, use your fingers to bring the mixture into larger clumps for that perfect streusel texture.
  3. Add half of the crumb mixture to the prepared tart pan. It’s not necessary to cover the entire pan with this initial layer. Top with half of the strawberry jam, dolloping it in a few distinct spaces.
  4. Evenly distribute the remaining half of the crumb mixture over the jam, ensuring all empty spots are filled. Dollop the remaining jam in a few more spots on top of the crumb.
  5. Bake for 30 minutes, or until the jam is bubbly and the crumb topping is lightly golden brown. Remove from the oven.
  6. After 10-15 minutes of cooling, carefully cut the cookies into 8 wedges before they harden completely. Keep them in the tart pan until they have totally cooled to room temperature, then remove and serve.

  • These cookies are delicious both with and without the strawberry jam. Feel free to experiment or make a batch of each!
