- 1 lb. lean ground beef, I use Laura’s Lean
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 2 tsp. dried oregano
- 1 tsp. dried parsley
- 1/4 tsp. ground cinnamon
- 1/4 tsp. red pepper flakes
- 2 1/2 cups low-sodium beef broth
- 1/2 cup milk
- 1 8-oz. can tomato sauce
- 2 cups elbow macaroni, uncooked
- 2 bay leaves
- 1/2 cup feta cheese, crumbled
Instructions
- Add the olive oil to a large skillet and heat over medium-high heat. Add the ground beef and brown, breaking it up with a spoon, along with the onion until the meat is no longer pink and the onions are translucent. Drain most of the liquid. Stir in the garlic, oregano, parsley, cinnamon and red pepper flakes and cook for an additional one minute.
- Stir in the broth, milk, tomato sauce and macaroni. Bring to a boil. Cover and reduce temperature to a simmer. Cook for 10-12 minutes or until the pasta is nice and tender, stirring occasionally. Season to taste with salt and pepper. Stir in feta cheese until melted or you can serve it with the feta and let people sprinkle their helping with it themselves. Serve immediately.
