Ingredients
For the Bangers
- 6 large banger sausages
- 2 Tbsp. olive oil
Guinness Onion Gravy
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 2 medium yellow onions, thinly sliced
- 2 Tbsp. all-purpose flour
- 2 cups Blonde Guinness Beer
- 1 Tbsp. Dijon Mustard
- 1 Tbsp. Worcestershire sauce
- 2 tsp. granulated sugar
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
Mashed Potatoes
- 2 lb. russet potatoes
- 4 Tbs. butter
- 1/2 cup whole milk
- 2 tsp. kosher salt
- 1 tsp. freshly ground black pepper
Instructions
- Guinness Onion Gravy: Melt the butter in a large skillet over medium-high heat. Add the olive oil and the sliced onions and sauté, stirring often, until they are beautifully caramelized, which will take about 30 minutes.
- Once onions are caramelized, sprinkle in the all-purpose flour and cook for another 2-3 minutes until the flour turns a golden brown.
- Pour in the Guinness Blonde, then stir in the Dijon mustard, Worcestershire sauce, granulated sugar, kosher salt, and freshly ground black pepper. Reduce the heat to low and allow the gravy to simmer gently until it has thickened to your desired consistency, approximately 8-10 minutes.
- Bangers: While the gravy simmers, heat 2 Tbsp. olive oil in a large cast-iron skillet over medium heat. Add the banger sausages and cook, turning occasionally, until they are evenly browned on all sides and thoroughly cooked through. This typically takes about 12-15 minutes.
- Mashed Potatoes: Peel the russet potatoes and cut them into large, uniform chunks. Place the potato chunks in a saucepan and cover with cold water. Season the water generously with salt and bring it to a boil over medium heat. Cook until the potatoes are tender enough to be easily pierced with a fork, usually about 15 minutes.
- Drain the cooked potatoes thoroughly. Return them to the saucepan and mash them with a potato masher until smooth. Add the 4 Tbsp. butter and 1/2 cup whole milk, continuing to mash until the mixture is creamy and free of lumps. Season the mashed potatoes with 2 tsp. kosher salt and 1 tsp. freshly ground black pepper to taste.
- To Assemble: Arrange a generous portion of creamy mashed potatoes on each plate. Top with 1-2 cooked banger sausages, and then spoon a liberal amount of the rich Guinness Onion Gravy over the entire dish. Serve immediately and enjoy!
