  • 4 cups yellow onion, sliced into 1/4-inch thick slices then halved
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1 Tbsp. granulated sugar
  • 3 cloves garlic, minced
  • 1/4 cup sherry
  • 3 Tbsp. all-purpose flour
  • 3 cups beef broth
  • 2 tsp. fresh thyme leaves
  • 3 cups swiss cheese, shredded
  • 1/4 cup grated parmesan cheese
  • 1/4 cup plain panko bread crumbs
  • Garnish: extra grated parmesan cheese

Instructions

  1. Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package directions. Drain and set aside.
