- 1 Tbsp. unsalted butter
- 1/3 cup shallot, finely chopped
- kosher salt and freshly ground pepper, to taste
- 1 clove garlic, finely minced
- 2 1/2 cups firm, ripe Bartlett pears, peeled, cored and chopped into 1/4 inch cubes
- 1/3 cup brown sugar, firmly packed
- 1/4 cup apple cider vinegar
- 2 Tbsp. bourbon
- 1/4 cup dried cranberries
- 1 Tbsp. fresh lemon juice
- 1 tsp. mustard seed
- 1/2 tsp. red pepper flakes
- 1/4 tsp. cardamon
- 1 (2-inch) cinnamon stick
Instructions
- In a medium saucepan, melt butter over medium heat. Add shallot, 1/4 tsp. kosher salt, and 1/8 tsp. freshly ground black pepper. Cook until softened, about 2 minutes.
- Add minced garlic and continue to cook for one minute, stirring constantly to prevent burning.
- Stir in the chopped pears, brown sugar, apple cider vinegar, bourbon, dried cranberries, fresh lemon juice, mustard seed, red pepper flakes, cardamom, and the cinnamon stick.
