Ingredients

Chili

  • 2 Tbsp. olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 lbs. ground beef
  • 3 Tbsp. chili powder
  • 2 Tbsp. cumin powder
  • 3 tsp. dried oregano
  • 2 tsp. paprika
  • 2 tsp. salt
  • 1/2 tsp. cayenne powder
  • 1 28-oz. can crushed tomatoes
  • 1 14.5-oz. can petite diced tomatoes, drained
  • 2 Tbsp. light brown sugar
  • 1 cup beef broth
  • 1 15-oz. can pinto beans, drained

For the Frito Pie Assembly

  • 6-8 cups Fritos™ corn chips
  • 2 cups shredded cheddar-jack cheese
  • 1 cup yellow onion, chopped
  • Sour cream, sliced jalapeños, fresh cilantro, or diced avocado, for topping, if desired

Instructions

Preparing the Chili

  • In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until it becomes translucent and softened. Add the minced garlic and continue to cook, stirring constantly for just 1 minute until fragrant.
  • Add the ground beef to the pot. Cook, breaking it up with a wooden spoon, until it is no longer pink and is fully browned. Carefully drain almost all of the excess fat from the pot, leaving just a tablespoon or two for flavor.
  • Stir in the chili powder, cumin, dried oregano, paprika, salt, and cayenne powder. Cook for another minute, stirring constantly, to toast the spices and enhance their flavor.
  • Pour in the crushed tomatoes and the drained petite diced tomatoes. Add the light brown sugar and 1/2 cup of the beef broth. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook, uncovered, for 20 minutes, stirring often to prevent sticking and allow the flavors to meld beautifully.
  • Finally, add the drained pinto beans and the remaining 1/2 cup of beef broth. Continue to simmer for an additional 15 minutes, allowing the beans to warm through and absorb the delicious chili flavors. Taste and adjust seasonings as needed.
