  • 1 large shallot,  peeled and finely chopped (approximately 1/4 cup)
  • 1/4 cup pure maple syrup
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. granulated sugar
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup extra virgin olive oil

Instructions 

Preparing the Salad Components

  • In a medium saucepan, bring 2 quarts of water to a rolling boil. Add one teaspoon of salt to the boiling water, then stir in the rinsed farro. Allow it to return to a boil, then reduce the heat to medium-high and continue to boil, uncovered, until the farro is tender and chewy, typically about 30 minutes. Once cooked, thoroughly drain the farro and let it cool completely.
  • While the farro is cooking, prepare your carrots. Using either a vegetable peeler, create thin, delicate strips or ribbons. Alternatively, if you have a food processor, use its coarse shredding blade for a quicker and more uniform shred. Transfer the prepared carrots to a large mixing bowl.
  • Once the farro has cooled, add it to the large bowl with the shredded carrots. Incorporate the chopped Medjool dates and approximately 1/2 cup of the freshly prepared Maple Vinaigrette Dressing.
