The Effortless Charm of Sheet Pan Dinners
Sheet pan cooking has revolutionized home kitchens, and for good reason. The concept is brilliantly simple: combine all your ingredients on a single baking sheet, roast them in the oven, and emerge with a complete, delicious meal and minimal cleanup. This method isn’t just about convenience; it’s about maximizing flavor. Roasting vegetables and proteins together on a sheet pan creates a beautiful caramelization, intensifying their natural sweetness and savory notes. For busy individuals and families, sheet pan meals mean less time prepping, less time scrubbing dishes, and more time enjoying the moments that matter.
Fajitas are an ideal candidate for this streamlined approach. Traditionally, fajitas involve sizzling meat and vegetables cooked on a stovetop, often creating multiple pans to wash. By transitioning to a sheet pan, we capture all those wonderful fajita flavors – the smoky spices, the tender-crisp vegetables, and the perfectly cooked protein – with the added benefit of oven-baked ease. This method makes it possible to enjoy restaurant-quality fajitas right in your own home, any night of the week.

Essential Ingredients for Your Sheet Pan Shrimp Fajitas
Gathering your ingredients is the first step to a delicious meal. For these Sheet Pan Shrimp Fajitas, you’ll need a vibrant selection to build those incredible flavors:
- Tony Chachere’s 30-Minute Seafood Marinade: The key to perfectly seasoned, succulent shrimp.
- Tony Chachere’s Original Creole Seasoning: Your secret weapon for adding robust, authentic flavor to the veggies and overall dish.
- Large Shrimp: Peeled and deveined for convenience. Look for fresh or good quality frozen shrimp.
- Assorted Bell Peppers: A colorful combination of green, red, yellow, or orange bell peppers, sliced into thin strips for visual appeal and varied sweetness.
- Medium Onion: Sliced to meld beautifully with the peppers and shrimp.
- Olive Oil: To help roast the vegetables to perfection and bind the seasoning.
- Fresh Limes: Essential for a squeeze of bright, acidic flavor to finish the fajitas.
- Flour Tortillas: Warm, soft tortillas are the perfect vessel for your sizzling fajita filling.
- Optional Toppings: Chopped cilantro, salsa, guacamole, shredded cheese, and extra sour cream can elevate your fajita experience even further.
Crafting the Creamy Avocado Crema
No fajita feast is complete without the perfect accompaniment, and for these Shrimp Fajitas, we’re making a simple yet sensational Avocado Crema. This creamy, cool sauce provides a wonderful contrast to the warm, spicy fajitas, adding a layer of richness and freshness that truly ties the meal together.
- Ripe Avocados: The star of the crema, offering a smooth, buttery base.
- Sour Cream: Adds tang and an extra creamy texture.
- Freshly Squeezed Lime Juice: Brightens the flavor and helps prevent avocado from browning.
- Tony Chachere’s Original Creole Seasoning: A subtle hint of seasoning to complement the fajitas.
- Milk: To achieve your desired consistency – start with less and add more if you prefer a thinner crema.
- Minced Garlic Clove: For a delicate aromatic kick.
- Chopped Cilantro: Optional, but highly recommended for fresh herbal notes.

The Perfect Pairing: Zesty Fajitas with Silky Avocado Crema
The beauty of these fajitas extends beyond the main event; it also includes the incredibly simple yet impactful avocado crema. This luscious, vibrant green sauce comes together in mere minutes. Just combine all the crema ingredients in your blender or food processor, and blend until it reaches a silky-smooth consistency. The cool, creamy texture and fresh flavor of the avocado crema are the ideal counterbalance to the warm, zesty shrimp and peppers, creating a harmonious bite every time. It’s a nice and creamy addition that will become a mandatory topping once you try it!

Expert Tips for Flawless Sheet Pan Shrimp Fajitas
Achieving perfect Sheet Pan Shrimp Fajitas is easy with a few simple considerations:
- Bell Pepper Combination: While any combination of bell peppers works wonderfully, using a mix of colors (green, red, yellow, orange) adds not only visual appeal but also subtle variations in sweetness and flavor to your fajitas.
- Onion Choice: I typically opt for a yellow onion for its classic, slightly sweet flavor profile. However, if you prefer a sharper, more vibrant kick and an extra pop of color, a red onion makes an excellent substitute.
- Seasoning to Taste: I recommend tossing the veggies with 3 tablespoons of olive oil and 1 1/2 teaspoons of Tony Chachere’s Original Creole Seasoning to start. Remember, seasoning is personal! Feel free to add more or less Creole Seasoning to your liking, tasting as you go to hit that perfect flavor balance.
- Don’t Overcrowd the Pan: For best results, ensure your shrimp and vegetables are spread in a single layer on the baking sheet. Overcrowding can lead to steaming instead of roasting, preventing that desirable caramelization and crisp-tender texture. If necessary, use two baking sheets.
- Shrimp Timing is Key: Shrimp cooks very quickly. To avoid tough, rubbery shrimp, it’s crucial not to overcook them. They are typically done when they turn opaque and pink, usually within 8-10 minutes. Removing them while the veggies finish ensures perfect texture.

- 1/2 tsp. Tony Chachere’s Original Creole Seasoning
- 1/4 cup milk
- 1 clove garlic, minced
- 1/2 cup chopped cilantro, optional
Shrimp Fajitas
- 1 1/2 lbs. large shrimp, peeled and deveined
- 3/4 cup Tony Chachere’s 30-Minute Seafood Marinade
- 2 green bell peppers, sliced into thin strips
- 1 red bell pepper, sliced into thin strips
- 1 yellow or orange bell pepper, sliced into thin strips
- 1 medium onion, sliced
- 3 Tbsp. olive oil
- 1 1/2 tsp. Tony Chachere’s Original Creole Seasoning
- 2 limes, cut into wedges
- 8 6-inch flour tortillas
- chopped cilantro, salsa, guacamole, shredded cheese, sour cream for serving, if desired
Instructions
Avocado Crema
- Combine all ingredients in a food processor or blender and blend until smooth. Refrigerate until ready to serve with fajitas.
Shrimp Fajitas
- Arrange rack in middle of oven and preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large rimmed baking sheet with parchment paper. Set aside. In a medium bowl, combine shrimp and marinade. Toss well. Place bowl in refrigerator for 30 minutes.
- Cut bell peppers and onions into thin slices (as pictured) and place in a separate medium bowl. Toss with olive oil and Tony’s Original Creole Seasoning until evenly coated.
- Remove the shrimp from the refrigerator. Using a slotted spoon, arrange the marinated shrimp onto one side of the prepared baking sheet in an even layer. Add the seasoned peppers and onions to the other side of the tray. Bake for 10 minutes, or until the shrimp are opaque and pink. Immediately remove the shrimp from the tray to a clean bowl and cover with foil to keep warm. Continue to bake the vegetables for an additional 3 minutes.
- Turn your oven broiler onto high. Broil the vegetables for 3-4 minutes, watching carefully to prevent burning, until they achieve a slight char and become tender-crisp. Remove from the oven and gently toss the broiled peppers and onions with the reserved shrimp. Serve immediately with the prepared avocado crema, warm flour tortillas, and fresh lime wedges. Offer optional toppings like extra cilantro, salsa, guacamole, shredded cheese, or sour cream.
Notes
- You can use any combination of bell peppers for this recipe to add color and varying sweetness.
- I used a yellow onion for a classic flavor, but a red onion can be substituted for a bolder taste and vibrant color.
- I tossed my veggies with 3 tablespoons of olive oil and 1 1/2 teaspoons of Tony’s Original Creole Seasoning, but feel free to adjust the amount of seasoning to your personal liking.
- For best results, do not overcrowd the baking sheet. If necessary, use two sheets to ensure even cooking and proper caramelization.
