Ingredients  

  • 1 16- oz. box elbow pasta
  • 1 cup good mayonnaise
  • 2 tsp. yellow mustard
  • 1 Tbsp. distilled white vinegar
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 8 large eggs, hard-boiled and roughly chopped
  • 1 1/2 cups celery, finely chopped
  • 3/4 cup red onion, finely chopped
  • fresh parsley finely chopped for sprinkling on top, if desired
  • paprika, for garnish, if desired

Instructions 

  • In a large pot of salted boiling water, cook elbow pasta according to package directions until al dente. Drain thoroughly and let cool for 5-10 minutes, or until completely cool.
  • In a small bowl, whisk together the mayonnaise, yellow mustard, distilled white vinegar, kosher salt, and freshly ground black pepper until smooth and well combined. Set this creamy dressing aside.
  • In a large bowl, combine the cooled pasta with the hard-boiled and roughly chopped eggs, finely chopped celery, and finely chopped red onion. Just before serving, pour the prepared dressing over the mixture and toss everything until well coated. If desired, sprinkle with fresh parsley and a dash of paprika for garnish. Cover the bowl and place it in the refrigerator to chill for at least 2 hours to allow the flavors to meld beautifully.

I use elbow pasta for this recipe for its classic texture, but any small pasta shape like ditalini, small shells, or even rotini will work well.
