- 8 ounces elbow macaroni
- 2 tsp. salt
- 3 Tbsp. butter
- 1 medium onion, finely chopped
- 2 Tbsp. all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 tsp. ground mustard
- 1/4 tsp. cayenne red pepper
- 1 1/2 tsp. kosher salt
- 1/2 tsp. ground pepper
- 2 cups sharp white cheddar cheese, freshly grated
- 2 cups sharp yellow cheddar cheese, freshly grated
- 3/4 lb. cooked lobster meat, cut into big chunks
- 1/2 cup panko Japanese bread crumbs
- Old Bay seasoning for sprinkling on top
Instructions
- Preheat oven to 375 degrees F (190 C). Fill a large pot with water and 2 tsp. salt, then prepare the macaroni al dente according to package directions. Drain and set aside.
- Melt 3 Tbsp. butter over medium heat in a large saucepan. Add the finely chopped onion and cook for 5 minutes, until softened and translucent. Whisk in the all-purpose flour and cook for one minute, stirring constantly, to create a roux.
- Slowly whisk in the whole milk and heavy cream. Add the ground mustard, cayenne red pepper, kosher salt, and ground pepper. Continue stirring constantly and cook for 8 minutes, or until the sauce is nice and thick.
- Remove the saucepan from the heat. Stir in 3 1/2 cups of the combined cheddar cheeses until completely melted and smooth.
- Add the cooked macaroni and the cut lobster chunks to the cheese sauce, stirring gently to combine everything thoroughly.
- Pour the mixture into a 2.4-quart or a 9×13-inch baking dish that has been sprayed with non-stick cooking spray.
