Discover the Rich Flavors of a Southern-Inspired Breakfast Casserole

As we approach the warmer months, the unofficial start to summer often signals a season brimming with outdoor gatherings, family visits, and, of course, delicious food. For me, Memorial Day weekend marks the beginning of a busy period of entertaining, and there’s nothing I love more than sharing new culinary creations with friends and family. This Creole Breakfast Egg Bake with Sausage and Potatoes is a testament to those joyful moments, a dish born from a desire to create something truly special for the brunch table.

Over the winter, my kitchen transforms into a testing ground for innovative recipes. The goal? To have a fresh repertoire of dishes ready for all the guests who grace my home throughout the summer. While this summer might look a little different, the spirit of cooking, baking, and sharing with loved ones—even from a safe distance—remains vibrant. This particular egg bake emerged as a shining star during these recipe trials, quickly earning a permanent spot on our brunch menu.

Picture this: lazy summer weekends, the scent of the ocean in the air, and a table laden with an irresistible spread. That’s the essence of brunching at the beach, and this Creole Egg Bake fits right in. I vividly recall serving it to our dear friends, Janice and Mark, during their winter visit to Florida. Their reaction was priceless—a unanimous “huge thumbs up!” Janice’s exact words, “Best breakfast casserole I’ve ever had,” truly solidified this recipe’s place in our hearts and on our menu. It’s a dish that not only satisfies hunger but also gathers people, creating warmth and cherished memories.

The Magic of Tony Chachere’s Creole Cuisine

This vibrant recipe was brought to life with the incredible support of my friends at Tony Chachere’s Creole Cuisine. This partnership has been a fantastic journey, and I’m thrilled to share this as my second recipe in our year-long collaboration. If you happened to miss my first creation, the Chicken Skewers with Bacon Ranch Cole Slaw, I highly recommend taking a peek! For that recipe, I used Tony’s newest addition to their product line, their Ranch Salad Dressing, which has quickly become a new favorite in my pantry.

Unpacking the Ingredients: Simple Steps to Big Flavor

One of the best aspects of this breakfast bake is its remarkable efficiency. You can whip it up in just about 15 minutes of active prep time, making it an ideal choice for busy mornings or when you need a fantastic dish ready for guests. The ingredient list is straightforward, yet each component plays a vital role in building the incredible flavor profile of this Creole masterpiece.

Tater Tots: The Ultimate Potato Layer

At the base of this casserole are crispy tater tots. Their convenience is unmatched – simply add them frozen to the baking dish; no thawing required! As they bake, they transform into a deliciously crisp and tender foundation, absorbing the rich flavors of the egg and sausage mixture above, providing that satisfying potato element without any extra fuss.

Savory Sausage and Aromatic Onion

The heartiness of this bake comes from a pound of bulk breakfast pork sausage, crumbled and cooked until perfectly browned. Paired with a finely chopped yellow onion, the sausage develops a rich, savory depth, while the onion becomes beautifully translucent and sweet, enhancing the overall aroma and taste of the dish. This combination forms the backbone of the Creole flavor, offering a robust and comforting experience.

The Creamy Egg Custard Base

The custard base is where the magic happens, ensuring every bite is light, fluffy, and incredibly rich. A classic blend of a dozen large eggs, whole milk, and heavy cream creates a velvety texture that bakes up beautifully puffy and golden brown. This creamy mixture perfectly encases all the savory ingredients, delivering a truly luxurious mouthfeel.

Pimentos and Cheese: Color and Comfort

Adding a touch of vibrant color and a subtly sweet, peppery note are diced pimentos. I personally love pimentos, so I opt for two 4-ounce jars, but you can adjust this to one jar if you prefer a milder flavor. Remember to drain them well before adding them to prevent excess moisture. For the cheese, shredded cheddar provides a classic, sharp tang, but feel free to experiment with colby-jack, Swiss, or your favorite cheese to tailor the flavors to your preference.

The Creole Kick: Tony Chachere’s Original Seasoning & Dijon Mustard

The star of the show, delivering that unmistakable Creole zest, is Tony Chachere’s Original Creole Seasoning. It’s my absolute go-to for adding a lively kick to countless dishes. This unique blend of spices never fails to infuse just the right amount of zestiness and depth, elevating the entire dish. A touch of Dijon mustard is also included, not to overpower, but to subtly enhance the savory notes and provide a delicate tang that beautifully complements the other ingredients.

Crafting Your Creole Breakfast Masterpiece

The assembly of this breakfast bake is as simple as its ingredients. Once your sausage and onion are cooked and your egg mixture whisked, it’s just a matter of combining everything over the tater tot base and letting your oven do the rest. The bake emerges from the oven delightfully puffy and golden brown, signaling a perfect internal set that’s both creamy and firm. While it’s tempting to dive right in, allowing it to rest for about 15 minutes after baking helps the flavors meld and makes for cleaner slices.

When it comes to serving, this versatile dish pairs wonderfully with a variety of accompaniments. Imagine it alongside a crisp piece of buttered toast, a steaming cup of coffee, and for those leisurely brunch occasions, perhaps a spicy Bloody Mary made with Tony’s Bloody Mary Mix. I told you, Tony’s truly has something for every part of your meal!

Make-Ahead Tips and Leftovers

This Creole Breakfast Egg Bake is an absolute dream for entertaining because it can be largely prepared ahead of time. You can cook the sausage and onion mixture, whisk the egg custard, and even assemble the entire casserole in your baking dish the night before. Just cover it tightly and refrigerate. In the morning, simply pop it into the preheated oven, adding a few extra minutes to the baking time if cooking from cold. This allows you to enjoy your morning and your guests without feeling rushed.

And if by some miracle there are any leftovers, you’re in for a treat! This egg bake reheats beautifully, making it perfect for a quick breakfast or lunch throughout the week. Simply store any remaining portions in an airtight container in the refrigerator for up to 3-4 days. Reheat individual slices in the microwave or oven until warmed through. It truly is a gift that keeps on giving!

Customize Your Breakfast Bake

One of the joys of cooking is customization, and this Creole Breakfast Egg Bake is incredibly versatile. Don’t hesitate to make it your own! Consider adding other vegetables like diced bell peppers (red and green would add a lovely color and sweetness), chopped spinach, or even some thinly sliced mushrooms. If you’re not a fan of pork sausage, try using a spicy chicken or turkey sausage, or even crumbled bacon. Experiment with different cheeses; a pepper jack would add an extra kick, while Gruyère could offer a sophisticated nuttiness. Adjust the amount of Tony Chachere’s seasoning to control the spice level, adding a pinch more if you like things extra zesty!
