  • 3 cups old-fashioned rolled oats
  • 1 cup slivered almonds
  • 1/2 cup pecan halves
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp. kosher salt
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted (I use ShopRite Wholesome Pantry Organic Coconut Oil)
  • 3 Tbsp. light brown sugar, lightly packed
  • 1 tsp. vanilla extract
  • 3/4 cup dried cherries
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 325 degrees F (160 degrees C). Line a baking sheet with parchment paper.
  2. Combine the first six ingredients (oats, almonds, pecans, coconut, cocoa powder, and salt) together in a large bowl.
  3. In a separate small bowl, combine maple syrup, melted coconut oil, brown sugar, and vanilla extract. Whisk until well combined and smooth.
