Ingredients

For the Popovers:

  • 4 large eggs
  • 1 1/2 cups milk (lukewarm)
  • 1/2 tsp. kosher salt
  • 1 Tbsp. granulated sugar
  • 1 1/2 cups unbleached all-purpose flour
  • 3 Tbsp. butter (melted)

For the Chai Spice Topping:

  • 1/2 cup granulated sugar
  • 1 tsp.cinnamon
  • 1 tsp. ground ginger
  • 1/4 tsp. ground cardamom
  • 1/4 tsp. ground cloves
  • 3 Tbsp. butter (melted)

Instructions

  1. Preheat your oven to 450°F (230°C). Position an oven rack on the lower shelf.
  2. Generously spray your popover pan or muffin tin with non-stick cooking spray. If using a muffin tin, make sure to spray the areas between the cups as well. Place the empty pan in the preheated oven for 5-10 minutes to get it very hot.
  3. To ensure the eggs are warm, place them in a cup of hot water for about 10 minutes before using. This helps achieve a lighter texture.
  4. In a large bowl, whisk together the warmed eggs, lukewarm milk, kosher salt, and granulated sugar until no streaks of yolk remain.
  5. Gradually add all the unbleached all-purpose flour, beating until the batter is frothy and most large lumps have disappeared. A few small lumps are perfectly fine.
  6. Quickly stir in the 3 tablespoons of melted butter until just incorporated.
  7. Carefully remove the hot pan from the oven and immediately pour the batter into the prepared cups, filling each approximately 3/4 full.
  8. Bake the popovers at 450°F (230°C) for 15 minutes. It is crucial NOT to open the oven door during this time.
  9. After 15 minutes, reduce the oven temperature to 350°F (175°C) and continue baking for another 20 minutes, or until the popovers are beautifully golden brown and fully puffed. Again, try not to open the door during this phase.
  10. Remove the popovers from the oven. Immediately stick the sharp tip of a knife into the top of each popover. This allows steam to escape and helps prevent them from becoming soggy.
  11. While still warm, brush each popover with some of the remaining melted butter (3 Tbsp for topping) and then carefully roll them in the prepared chai spice sugar mixture, ensuring they are well coated.
