Ingredients

  • 10 cups broccoli florets (about 2 lbs.)
  • 5 Tbsp. butter
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. freshly ground black pepper
  • 2 1/2 cups half and half
  • 1 cup sharp white cheddar cheese, shredded
  • 1 cup sharp yellow cheddar cheese, shredded
  • 4 large eggs, lightly beaten
  • 1 1/2 cups crispy fried onions, divided

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray a 9×13 baking dish with nonstick cooking spray. Set aside.
  2. Bring a large pot of water to a boil. Add a tablespoon of salt. Add broccoli florets and cook for 3 minutes until vibrant green and tender-crisp. Remove with a slotted spoon to a bowl filled with ice water to stop the cooking. After 30 seconds, remove the florets and strain them thoroughly in a colander.
