Ingredients

  • 4 oz. small pretzels, enough to fit in the bottom of a 10×15 jelly roll pan in a single layer, as pictured
  • 1 cup unsalted butter, plus a bit more for buttering the pan
  • 2 Tbsp. light corn syrup
  • 1/2 cup water
  • 1 1/2 cups granulated sugar
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1/2 cup semisweet chocolate, finely chopped (I use Ghirardelli semisweet baking bars)
  • 1/2 cup white chocolate, finely chopped (I use Ghirardelli white baking bars)

Instructions

  • Lightly butter the bottom of a large 10×15 jelly roll pan. Arrange the small pretzels in a single layer to cover the bottom of the pan. Set aside.
  • In a large, heavy-duty saucepan, melt the 1 cup of unsalted butter over low heat. Add the corn syrup, water, granulated sugar, and salt. Increase the heat to medium, stirring constantly with a wooden spoon until the sugar is completely dissolved. Attach your candy thermometer to the side of the pot, ensuring it doesn’t touch the bottom. Bring the mixture to a boil and continue to cook, stirring slowly and constantly, until the candy thermometer registers exactly 290 degrees F (approximately 15 minutes), which is the hard crack stage.
  • Carefully remove the thermometer and immediately take the saucepan off the heat. Quickly add the baking soda and mix well – the mixture will foam up. Immediately and carefully pour the hot toffee evenly over the pretzels in your prepared pan, spreading quickly with a heat-resistant spatula if needed. Allow the toffee to set completely in a cool place for about 1 1/2 hours, or until fully hardened. Break the cooled toffee into irregular pieces.

    Place the finely chopped semisweet chocolate and white chocolate into two separate microwave-safe bowls. Microwave each chocolate, one at a time, in 30-second intervals, stirring thoroughly after each interval, until melted and smooth. Arrange the broken toffee pieces on a wire rack placed over a baking sheet (to catch drips). Drizzle generously with both melted semisweet and white chocolate. Let the chocolate set at room temperature or in the refrigerator for a few minutes until firm. Once set, your pretzel toffee is ready to enjoy!

    Store any leftover pretzel toffee in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks for extended freshness.
