Ingredients
- Strawberry Layer:
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 tsp freshly squeezed lemon juice
- 2 1/2 cups strawberries, hulled and diced
- Cream Cheese Mixture:
- 8 oz cream cheese, room temperature
- 4 Tbsp granulated sugar
- 1/2 cup half and half
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- Blueberry Layer:
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 tsp freshly squeezed lemon juice
- 2 1/2 cups blueberries
Instructions
- Strawberry Layer:
- Combine 1/3 cup granulated sugar and 1/3 cup water in a small saucepan over medium heat. Bring to a boil and stir until sugar is completely dissolved, which should take about 4 minutes. Remove the pan from the heat and allow the simple syrup to cool down.
- Place the hulled and diced strawberries and 1 tsp lemon juice into a blender. Add the cooled simple syrup mixture and puree until the mixture is perfectly smooth.
- Carefully spoon this strawberry puree into the bottom of your popsicle molds, filling each mold approximately 1/3 full (about 2 tablespoons per mold, but adjust based on your mold size). Freeze until this layer is firm, usually about 1-2 hours.
- Cream Cheese Layer:
