A standard 12-cup muffin tin with 2½-inch wide by 1½-inch deep wells can work wonderfully. The key is to ensure ample space for the batter to rise. Whether using a popover pan or a muffin tin, make sure to spray it generously with non-stick cooking spray, especially between the cups if using a muffin tin, to prevent sticking and encourage maximum expansion.
Temperature is Paramount
Precision in oven temperature is critical for popover success. Begin by preheating your oven to a scorching 450°F (232°C) with the rack positioned on the lower shelf. - 4 large eggs
- 1 1/2 cups milk (lukewarm)
- 1/2 tsp. kosher salt
- 2 Tbsp. grated parmesan cheese
- 1/2 tsp. ground black pepper plus more for sprinkling on top
- 1 1/2 cups unbleached all-purpose flour
- 3 Tbsp. butter (melted)
Instructions
- Preheat oven to 450 degrees F (232°C). Position rack on the lower shelf.
- Spray the popover pan or muffin tin generously with non-stick cooking spray. If using a muffin tin, spray the area between cups too.
- Place eggs in a cup of hot water for 10 minutes before using to bring them to room temperature.
- In a large bowl, whisk together the eggs, lukewarm milk, kosher salt, grated Parmesan, and ground black pepper. Whisk until there are no visible streaks of yolk left and the mixture is well combined.
- Add all the unbleached all-purpose flour to the wet ingredients and beat until frothy. Ensure there are no large lumps of flour; a few small lumps are acceptable. Avoid overmixing.
- Quickly stir in the melted butter until just incorporated into the batter.
- Pour the batter into the prepared cups, filling each 2/3 to 3/4 full. Sprinkle the tops with a little more fresh ground black pepper for added flavor and visual appeal.
