Ingredients
- 3 cups nectarines, pitted and sliced
- 2 cups fresh blueberries
- 2 Tbsp. freshly squeezed lemon juice
- 3 Tbsp. granulated sugar
- 1 1/2 Tbsp. tapioca starch
- 1 cup Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
- 1/2 cup Bob’s Red Mill Almond Meal (or Almond Flour)
- 1/2 cup pecans, roughly chopped
- 1/4 cup light brown sugar, packed
- 1 tsp. ground cinnamon
- Dash of kosher salt
- 5 Tbsp. unsalted butter, cut into chunks and chilled
Instructions
- Preheat your oven to 350 degrees F (175 C). Lightly butter an 8×8 inch baking dish.
- In the prepared baking dish, combine the sliced nectarines, fresh blueberries, lemon juice, granulated sugar, and tapioca starch. Toss gently until all the fruit is evenly coated.
- In a separate medium-sized bowl, mix together the Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats, Bob’s Red Mill Almond Meal, roughly chopped pecans, light brown sugar, ground cinnamon, and a dash of kosher salt.
