Hello, wonderful friends and fellow food enthusiasts! I hope your weekend was filled with joy, relaxation, and perhaps a touch of culinary adventure. Mine, as always, flew by in a whirlwind of activity, but this time, it was for the most exhilarating reason. After months of anticipation and hard work, my kitchen renovation is finally complete! Yes, you read that right – the heart of my home, the Beach House Kitchen (BHK), is officially back in business, sparkling and ready for countless new recipes and shared meals.

The journey to this gleaming new space was a labor of love, marked by dust, decisions, and the incredible craftsmanship of my dear friend, Samuel. Hailing from the renowned artisan community of Lancaster County, Pennsylvania, Samuel is nothing short of a kitchen cabinet wizard. His dedication to detail, his passion for woodworking, and his ability to translate my vision into a tangible, breathtaking reality is truly unparalleled. From the initial design sketches to the final installation of every custom-built cabinet, Samuel poured his expertise and artistry into every corner. The appliances were seamlessly hooked up just last Friday, breathing life back into my culinary sanctuary. With only a few minor finishing touches remaining, the grand transformation is complete, and it has exceeded every expectation. A massive, heartfelt thank you to Samuel – your work is a masterpiece!

My choice was immediate and enthusiastic: a spicy, utterly delicious Vegetable Curry. This particular recipe captured my attention last year when I stumbled upon it in Southern Living magazine. As a long-time admirer of all things curry, I was instantly drawn to its promise of bold flavors and wholesome ingredients. It’s a dish that celebrates both indulgence and well-being, striking the perfect balance.

Homemade Vegetable Curry served with rice

Vegetable Curry

Ingredients  

  • 2 Tbsp. butter
  • 1 Tbsp.olive oil
  • 1 cup thinly sliced shallots about 3 medium-sized
  • 1 jalapeno pepper seeded and minced (adjust to preferred spice level)
  • 2 Tbsp. fresh minced ginger
  • 1 Tbsp. red curry powder
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. kosher salt
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. tomato paste
  • 3 cups red potatoes cubed into 1-inch pieces
  • 2 cups low salt chicken or vegetable broth
  • 2 cups cauliflower florets
  • 2 Tbsp. cornstarch
  • 2 Tbsp. cold water
  • 2 cups buttermilk
  • 1 5 oz. package baby spinach leaves
  • Hot cooked Long-grain rice for serving (optional, but highly recommended)

Instructions 

  • In a large, heavy-bottomed saucepan or Dutch oven, melt the butter and olive oil over high heat. Add the thinly sliced shallots, minced jalapeno, and fresh minced ginger. Sauté for approximately 2 minutes until fragrant and softened. Stir in the red curry powder, ground cumin, ground coriander, kosher salt, and cayenne pepper. Continue to stir constantly for another minute, allowing the spices to toast and release their aromas.
  • Next, stir in the tomato paste and continue to cook for 1 minute, ensuring it’s well incorporated with the spices. Add the cubed red potatoes to the pan. Reduce the heat to medium, cover the saucepan, and cook for 5 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  • Pour in the low-salt chicken (or vegetable) broth and add the cauliflower florets. Bring the mixture to a gentle boil. Once boiling, partially cover the saucepan and reduce the heat to medium-low. Allow it to simmer for 6-8 minutes, or until the potatoes are tender when pierced with a fork. Reduce the heat to low.
  • In a separate small bowl, whisk together the cornstarch and cold water until a smooth slurry forms. This will help thicken our curry.
  • Whisk this cornstarch mixture into the 2 cups of buttermilk. Gently stir the buttermilk mixture into the simmering vegetable curry. Continue to cook for 3-4 minutes, stirring constantly, until the curry thickens to your desired consistency. Be careful not to boil the buttermilk mixture vigorously, as it can curdle.
  • Finally, add the baby spinach leaves in small handfuls, stirring them into the hot curry. Cook for just 1-2 minutes, or until the spinach has wilted and its vibrant green color has darkened.
  • Remove the saucepan from the heat immediately. Serve your delicious, hearty Vegetable Curry hot, ideally over a bed of fluffy long-grain rice to soak up every last drop of the flavorful sauce. Garnish with fresh cilantro or a squeeze of lime, if desired. Enjoy this wholesome and satisfying meal!
