Vanilla Bean Cheesecakes with Toasted Coconut Crust Topped with Chocolate Ganache

Ingredients
- Crust:
- 1/2 cup toasted coconut chips plus extra for garnish I use Dang Toasted Coconut Chips
- 1 cup graham cracker crumbs
- 1 tsp. Rodelle vanilla extract
- 5 Tbsp. unsalted butter melted
- Cheesecake Filling:
- 16 oz. cream cheese
- 3/4 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 Tbsp. all-purpose flour
- 1/2 tsp. kosher salt
- 1 Rodelle vanilla bean seeds removed
- 1 tsp. Rodelle vanilla extract
- Chocolate Ganache:
- 8 oz. semisweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 325 degrees F (160°C).
- In a food processor, pulse the toasted coconut chips until they are finely chopped.
- In a medium bowl, combine the finely chopped coconut, graham cracker crumbs, vanilla extract, and melted butter.
- Mix all crust ingredients together with a fork until they are thoroughly incorporated and resemble wet sand.
- Press approximately 1/4 cup of the crumb mixture firmly into the bottom of each tin of your Norpro Small Cheesecake Pan (or a standard muffin pan lined with paper liners).
- For the cheesecake filling, in the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium speed until the mixture is smooth and creamy, which should take about 2 minutes. Scrape down the sides of the bowl as needed.
- With the mixer running on low speed, add the large eggs and the egg yolk one at a time, allowing each to fully incorporate before adding the next. Remember to scrape down the sides of the bowl after each addition to ensure everything is well combined.
- Gently stir in the all-purpose flour, kosher salt, the fragrant seeds removed from the Rodelle vanilla bean, and the Rodelle vanilla extract until the mixture is smooth and just combined. Be careful not to overmix at this stage.
- Carefully pour the cheesecake filling over the prepared crusts in each tin, smoothing the tops with a spatula. Bake in the preheated oven at 325 degrees F (160°C) for 20-25 minutes, or until the centers are just set and no longer jiggly when lightly shaken.
- Allow the cheesecakes to cool completely to room temperature within the cheesecake pan. Once cooled, continue to chill them in the refrigerator for at least an hour (or preferably longer) to firm up before unmolding.
- Once thoroughly chilled, carefully remove the cheesecakes from their pan and arrange them beautifully on a serving platter.
- For the chocolate ganache: In the top of a double boiler, combine the semisweet chocolate chips and heavy cream. Place the double boiler over simmering water (ensure the bottom of the top pot does not touch the water). Cook, stirring often, until the chocolate is completely melted and the mixture is smooth and glossy.
- Generously top each chilled cheesecake with the warm, melted chocolate ganache. For an extra touch of flavor and visual appeal, sprinkle with additional toasted coconut chips if desired. Serve immediately or chill again until ready to enjoy!
