Effortless Baking: The Magic of Drop Scones

I understand that sometimes, the thought of intricate baking can be daunting, especially during busy holiday seasons. That’s why I’ve made this recipe exceptionally easy by turning these into “drop scones.” This brilliant technique eliminates the need for any complicated shaping or cutting, making scone-making accessible to even the most novice bakers. All you need is a standard-sized ice cream scoop to portion out the dough directly onto your baking sheet. It’s quick, it’s clean, and it yields perfectly rustic, free-form scones every single time.

This method saves time and effort, allowing you to enjoy the delightful aroma of fresh scones wafting through your home sooner. The beauty of drop scones lies in their simplicity and charm. Each scone has a unique shape, giving them a wonderfully rustic and homemade appeal. This approach proves that you don’t need to be a pastry chef to create impressive and utterly delicious baked goods.

These Chocolate Chip Toasted Coconut Scones are absolutely wonderful with a comforting cup of hot tea, a robust mug of coffee, or even a decadent hot cocoa. They’re perfect for a leisurely weekend breakfast, a festive holiday brunch, or a simple afternoon pick-me-up.

As December unfolds, let’s embrace the spirit of baking and create delicious memories in our kitchens. These scones are a fantastic way to kick off your holiday baking endeavors, whether you’re making them for your family or sharing them with loved ones. Happy December, and let’s get ready to get our holiday bake on!

Expert Cook’s Notes for Perfect Chocolate Chip Toasted Coconut Scones

Achieving the perfect scone texture is all about incorporating cold butter into your dry ingredients. Here are a few invaluable tips to ensure your Chocolate Chip Toasted Coconut Scones turn out flaky and tender every time:

  • **The Frozen Butter Technique:** I’ve found a new favorite technique that yields exceptionally flaky scones. I actually freeze my stick of unsalted butter for at least 30 minutes (or even longer) before grating it directly into the dry mixture. This creates tiny, cold butter shards that melt slowly during baking, creating pockets of steam that result in a light, airy, and incredibly tender scone. If you don’t have a grater, you can also cube very cold butter and cut it in with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  • **Choosing Your Chocolate:** For these scones, you have the flexibility to use either semi-sweet chocolate chips for a classic, balanced sweetness or milk chocolate chips for a creamier, milder chocolate flavor. Both options work beautifully, so choose what best suits your preference. You can even experiment with white chocolate chips for a different twist!
  • **Perfectly Toasted Coconut:** Toasting coconut is a crucial step that enhances its flavor, bringing out its natural sweetness and creating a wonderfully aromatic depth. To toast your unsweetened coconut, spread it in a single layer on a baking sheet and bake in a preheated oven at 350°F (175°C) for 5-7 minutes. It’s essential to keep a very close eye on it, as coconut can go from perfectly golden to burnt in a matter of seconds. Stir it every couple of minutes to ensure even browning. The goal is a light golden color and a fragrant aroma.
  • **Mixing the Coconut:** You have two options for incorporating the toasted coconut: you can whisk it directly with the dry ingredients, or you can add it at the very end along with the chocolate chips, as demonstrated in many recipe videos. Both methods work perfectly well, so choose the one that feels most comfortable for your baking style.
  • **Don’t Overmix!** The key to tender scones is to mix the dough just until it comes together. Overmixing develops gluten, which can lead to tough scones. A light hand is always best.
  • **Brush with Cream for a Golden Top:** Brushing the tops of your scones with a little extra heavy cream before baking helps them achieve that beautiful golden-brown color and a slightly crispy crust.
  • **Sparkle and Shine:** A sprinkle of pure cane or turbinado sugar on top not only adds a lovely sparkle but also contributes to that delightful crunchy exterior.

These small details make a big difference in creating scones that are not only delicious but also professional-looking. Enjoy the process, and don’t be afraid to experiment!

Chocolate Chip Toasted Coconut Scones

Author: MaryAnn Dwyer

Yields: 10 scones

These Chocolate Chip Toasted Coconut Scones are a cozy winter breakfast treat! Buttery, tender, and incredibly easy to make, they are perfect for festive mornings or a delightful afternoon snack.

Prep Time: 15 mins

Cook Time: 18 mins

Total Time: 33 mins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup (one stick) unsalted butter, frozen and shredded
  • 1/2 cup heavy cream, plus a few tablespoons for brushing tops
  • 1 large egg
  • 1 tsp. vanilla extract
  • 2/3 cup unsweetened coconut, toasted
  • 3/4 cup chocolate chips (semi-sweet or milk chocolate)
  • Pure cane or turbinado sugar, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line two large baking sheets with parchment paper to prevent sticking and ensure easy cleanup. Set them aside.
  3. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk these dry ingredients together thoroughly to ensure they are evenly distributed.
  4. Add the frozen, shredded butter to the dry mixture. Using a pastry cutter, two forks, or your fingertips, cut the butter into the flour mixture until it resembles pea-sized crumbs. It’s crucial that the butter remains cold.
  5. In a separate small bowl, whisk together the 1/2 cup heavy cream, the large egg, and the vanilla extract until well combined.
  6. Pour the wet mixture into the dry ingredients. Add the toasted coconut and chocolate chips. Mix gently until the dough just comes together and forms a thick clump. Be careful not to overmix, as this can lead to tough scones.
  7. Using a standard ice cream scoop, scoop out 10 even portions of dough and place them onto the prepared baking sheets. Arrange them with some space in between.
  8. Brush the tops of each scone with a little extra heavy cream. This will help them achieve a beautiful golden crust.
  9. Generously sprinkle the tops of the scones with pure cane or turbinado sugar for added sparkle and a delightful crunch.
  10. Bake for 18 minutes, or until the scones are golden brown and cooked through. The exact baking time may vary slightly depending on your oven.
  11. Once baked, remove the scones from the oven and transfer them to a wire rack to cool slightly.
  12. These scones are best enjoyed on the day they are made, while still warm and fresh. However, they will keep well in an airtight container at room temperature for 1-2 days.
