Ingredients
Caramelized Onions
- 2 medium yellow onions, thinly sliced
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. granulated sugar
Quiche
- 4 large eggs
- 2 cups whole milk
- 2 Tbsp. Dijon mustard
- 1 Tbsp. cornstarch
- 10 sheets phyllo dough, 9×14 sheets
- 2 Tbsp. butter, melted
- 1 cup Swiss cheese, shredded
- 1 cup Jarlsberg cheese, shredded
- 3 oz. prosciutto slices, torn into pieces
- 1-2 Tbsp. parmesan cheese, grated
Instructions
Caramelized Onions
- In a large skillet, heat butter and olive oil over medium heat. Add onions and cook, stirring occasionally for 10 minutes until softened and lightly browned. Add salt, pepper and granulated sugar and continue to cook for another 10 minutes. If onions begin to burn, lower heat.
Quiche
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, whisk together eggs, milk, mustard and cornstarch until well combined. Set aside.
- Brush a 9-inch round cheesecake pan with a removable bottom (or a 9-inch round baking pan) with some of the melted butter. Lay one phyllo sheet into the pan, buttered-side down, gently pressing it to conform to the pan. Lightly brush the top of this sheet with melted butter. Repeat with the remaining phyllo sheets, overlapping them slightly and rotating them to ensure the entire bottom and sides of the pan are covered, creating an even, multi-layered crust. Remember to keep unused phyllo sheets covered with a damp kitchen towel to prevent them from drying out.
- Distribute half of the shredded Swiss and Jarlsberg cheeses evenly over the phyllo crust in the pan, along with half of the caramelized onions. Gently pour the prepared egg mixture over the cheeses and onions. Then, add the remaining shredded cheeses, caramelized onions, and torn prosciutto pieces evenly over the top of the egg mixture. Carefully mix these additions into the custard with a knife to ensure even distribution. Finally, sprinkle the top of the quiche with 1-2 tablespoons of grated Parmesan cheese.
- Bake for 45-50 minutes, or until the quiche is beautifully golden brown on top and the center is set (a knife inserted into the center should come out clean). Remove from the oven and allow it to cool slightly for about 10-15 minutes before carefully slicing into wedges. Serve warm with a fresh side salad, if desired.
