Ingredients

For the Crumb Topping:

  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar packed
  • 1 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 6 Tbsp. unsalted butter melted

For the Muffins:

  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cardamom
  • 1/4 tsp. freshly grated nutmeg
  • 1/2 cup unsalted butter (1 stick), room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 4 large eggs room temperature
  • 1 1/2 cups unsweetened applesauce

For the Vanilla Glaze (Optional):

  • 1 cup confectioner’s sugar sifted
  • 2 Tbsp. milk (or more, for desired consistency)
  • 1 tsp. vanilla extract

Instructions

  1. Prepare for Baking: Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners, or grease and flour the cups if not using liners. Set aside.
  2. Make the Crumb Topping: In a medium bowl, combine the all-purpose flour, light brown sugar, ground cinnamon, and salt. Whisk these dry ingredients together until well blended. Pour in the melted butter and stir with a fork until the mixture is crumbly and resembles coarse meal. Place the bowl in the refrigerator while you prepare the muffin batter to help firm up the crumbs.
  3. Combine Dry Muffin Ingredients: In another medium bowl, whisk together the 2 cups of all-purpose flour, baking soda, salt, ground cinnamon, ground cardamom, and freshly grated nutmeg. Ensure all spices are evenly distributed throughout the flour mixture. Set this bowl aside.
  4. Cream Wet Muffin Ingredients: In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the room temperature butter, granulated sugar, and light brown sugar on medium-high speed.
