Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup canola oil
  • 3/4 cup applesauce
  • 2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. cardamom
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup Bob’s Red Mill Fruit and Seed Muesli (separated)
  • 1/2 cup dried apricots (chopped)
  • 1/2 cup dried blueberries

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2″ x 4 1/2″ loaf pan.
  2. In a large bowl, combine sugar, eggs, canola oil, applesauce, and vanilla extract until well blended and smooth.
  3. In a separate, medium-sized bowl, whisk together the all-purpose flour, ground cinnamon, cardamom, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to a tough quick bread.
  5. Gently fold in 1/2 cup of the Bob’s Fruit and Seed Muesli, along with the chopped apricots and dried blueberries, distributing them evenly throughout the batter.
  6. Pour the prepared batter into your lightly greased loaf pan.
  7. Sprinkle the remaining 1/4 cup of muesli evenly over the top of the batter in the pan.
  8. Bake for 55-60 minutes, or until a wooden toothpick inserted into the center of the loaf comes out clean.
  9. Remove the bread from the oven and allow it to cool in the pan for 10 minutes before carefully removing it and transferring it to a wire rack to cool completely. Slicing too soon may cause it to crumble.
