Crispy BLT Phyllo Pizza: A Summer Sensation

As the weekend approaches, what better way to celebrate than with a fantastic pizza? You might be surprised to learn that I haven’t shared a pizza recipe until now, a fact I’m eager to rectify! Rest assured, I am a huge pizza enthusiast, and today, I’m thrilled to unveil a recipe that has quickly become a personal favorite: my delectable BLT Phyllo Pizza.

Summer simply wouldn’t be complete without the refreshing taste of a classic BLT. So, when contemplating what kind of pizza to share, inspiration struck! Why not combine the irresistible flavors of a bacon, lettuce, and tomato sandwich with the comforting allure of pizza? The result? This ingenious BLT Phyllo Pizza – a stroke of culinary genius that delivers on all fronts.

Why Phyllo Dough Makes the Perfect Pizza Crust

During the warmer months, I often crave lighter, fresher meals, and this pizza perfectly fits the bill. The secret lies in its exceptional crust: light, airy, and incredibly crispy phyllo dough. Unlike traditional thick pizza crusts, phyllo creates a delicate, flaky base that offers a delightful crunch with every bite. This unique foundation elevates the entire pizza experience, making it feel gourmet yet wonderfully approachable.

Each delicate layer of phyllo dough is carefully brushed with melted butter and sprinkled with Parmesan cheese, building a rich flavor profile and an unbelievably crispy texture. This layering technique is key to achieving that signature crackle and golden-brown perfection that sets this BLT Phyllo Pizza apart. The subtle nutty notes of Parmesan infuse the crust, complementing the vibrant toppings beautifully.

A Symphony of Fresh Flavors: The BLT Transformation

This pizza is a celebration of fresh, high-quality ingredients. It boasts juicy, plump Jersey tomatoes, which are renowned for their sweet, garden-fresh flavor, perfectly complementing the rich, savory crispy bacon. But the magic doesn’t stop there. We elevate the cheese factor significantly with not one, not two, but *four* distinct kinds of cheese!

Beyond the Parmesan layered in the crust, the top sheet of phyllo is generously coated with a thin layer of Alouette Garlic and Herbs Cheese. This adds a creamy, aromatic depth that serves as an incredible base for the other toppings. Finally, a harmonious blend of shredded mozzarella and provolone is sprinkled on top, ensuring a perfectly melted, gooey, and irresistible finish. A dash of dried oregano brings all these flavors together with its warm, earthy notes. If you ask me, this is summer pizza perfection!

Assembling Your Masterpiece: Tips for Success

Creating this BLT Phyllo Pizza is a straightforward process, but a few tips can ensure a truly spectacular result. When working with phyllo dough, remember that it dries out quickly. Keep unused sheets covered with a damp cloth to maintain their pliability. Don’t be shy with the melted butter and Parmesan; these layers are essential for achieving that incredible crispy, cheesy crust.

For the bacon, aim for perfectly crisp pieces, which provide a crucial textural contrast to the soft tomatoes and creamy cheese. Cook it thoroughly and drain off any excess fat. When arranging the sliced tomatoes, try to create an even layer, ensuring every bite gets a taste of their refreshing sweetness. The final touch of shredded romaine lettuce is added *after* the pizza bakes, preserving its crispness and providing that iconic BLT coolness and crunch.

Total Time

Ingredients

  • 8 slices bacon diced
  • 4 Tbsp. butter melted
  • 8 sheets phyllo dough size 9×14
  • 8 Tbsp. grated parmesan cheese
  • 1 6.5 oz. container Alouette Garlic and Herbs Cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese
  • 1 tsp. dried oregano
  • salt and pepper
  • 6 plum tomatoes sliced roughly 1/4 inch thick
  • 2 cups shredded romaine lettuce

Instructions

  • Heat a large saute pan over medium-high heat.
  • Cook bacon until crisp. Remove the bacon from the pan and set aside. You should have roughly 1 1/2 cups of diced crispy bacon.
  • Brush the bottom of a 9x13x1 inch baking pan with some melted butter. Lay one sheet of phyllo dough in the pan. Brush it with butter and sprinkle with 1 Tbsp. parmesan cheese. Repeat this layering process 6 more times, ensuring each sheet is buttered and cheesed.
  • Place the last sheet of phyllo on top of the stacked layers and evenly spread it with the Alouette Garlic and Herbs Cheese.
  • Generously sprinkle the shredded mozzarella, provolone, and the cooked crispy bacon over the Alouette cheese layer.
  • Artistically arrange the sliced tomatoes on top of the cheese and bacon mixture. Sprinkle the tomatoes with the final tablespoon of parmesan cheese, dried oregano, and season generously with salt and freshly ground black pepper to taste.
  • Bake in a preheated oven at 375 degrees Fahrenheit (190 degrees Celsius) for 25 minutes, or until the edges of the phyllo dough are lightly browned and crispy, and the cheese is bubbly and melted.
  • Remove the pizza from the oven, allow it to cool slightly, then cut it into squares. Before serving, top each delicious slice with some fresh, shredded romaine lettuce for that essential BLT crunch and coolness.
