Ingredients

  • 2 1/2 cups pecan halves
  • 1 cup graham cracker crumbs
  • 1 cup dark brown sugar, firmly packed
  • 1/2 tsp. salt
  • 2 Tbsp. maple syrup
  • 3 Tbsp. bourbon
  • 1 tsp. vanilla extract
  • 7 ounces good dark chocolate, chopped (do not use chocolate chips for best results)
  • Extra finely chopped pecans for sprinkling

Instructions

  1. To toast pecans: Preheat oven to 350°F (175°C). Spread pecan halves on a large baking sheet and place in the oven for 6-7 minutes, or until fragrant and lightly golden. Be careful not to burn them. Remove from oven and let cool completely, then finely chop them.
  2. In a medium-sized mixing bowl, combine the toasted and chopped pecans, graham cracker crumbs, dark brown sugar, and salt. Stir well to combine.
  3. Add the maple syrup, bourbon, and vanilla extract to the pecan mixture. Stir thoroughly until all ingredients are well combined and a moist, cohesive mixture forms.
  4. Using your hands, form the mixture into small balls, approximately the size of walnuts. Place these formed balls on a cookie sheet lined with parchment paper. Transfer the cookie sheet to the freezer and chill for at least 2 hours, or until the truffle balls are firm.
