  • 1/2 cup basil leaves, packed and julienned
  • 3 medium garlic cloves, peeled and minced
  • 1/2 cup good quality olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1 lb. linguine
  • freshly grated Parmesan cheese, crushed red pepper optional

Instructions

  • In a large serving bowl, combine chopped tomatoes, torn Brie, julienned basil, minced garlic, olive oil, kosher salt, and freshly ground black pepper. Cover the bowl and let the mixture sit at room temperature for at least two to three hours before serving. This marination step is crucial for flavor development.
  • Bring 6 quarts of generously salted water to a rolling boil in a large pot. Add 1 tablespoon of olive oil to the water (this helps prevent the pasta from sticking).
