Key Ingredients for Perfect Spinach Stuffed Shells

Creating these easy spinach stuffed shells involves a few simple, high-quality ingredients that come together to form an unforgettable dish:

  • Jumbo Shells: The perfect vessel for holding that delightful cheesy spinach filling.
  • Whole Milk Ricotta Cheese: Essential for a creamy, rich, and flavorful filling. Whole milk ricotta offers superior texture and taste compared to part-skim.
  • Mozzarella and Parmesan Cheeses: A blend that delivers the perfect balance of meltiness and salty, savory depth.
  • Fresh Spinach: Packed with nutrients and adds a wonderful earthy flavor and vibrant color. Using fresh, steamed spinach is recommended, but frozen can be a convenient alternative.
  • Eggs: Act as a binder for the ricotta filling, ensuring it stays together while baking.
  • Fresh Herbs: Parsley and oregano are classic Italian flavor enhancers that elevate the entire dish.
  • Garlic: No Italian dish is complete without the aromatic punch of fresh minced garlic.
  • Marinara Sauce: The foundation of the dish. A good quality store-bought marinara works wonderfully for ease, but a homemade sauce takes it to the next level.
  • Seasonings: Kosher salt, freshly ground black pepper, and a pinch of red pepper flakes for those who enjoy a little warmth.

Tips for Success: Making Your Spinach Stuffed Shells Even Better

While this recipe is incredibly straightforward, a few expert tips can ensure your spinach stuffed shells turn out perfect every time:

  • Perfectly Cooked Pasta: Cook your jumbo shells al dente, meaning they are still firm to the bite. They will continue to cook in the oven, and you want them to hold their shape and not become mushy.
  • Squeeze Out That Spinach: If using fresh baby spinach, steam it until wilted, then allow it to cool slightly before squeezing out as much moisture as possible. This step is crucial to prevent a watery filling. If using frozen spinach, thaw it completely and squeeze very, very dry.
  • Don’t Overstuff: While it’s tempting to load each shell, aim for a generous but manageable amount of filling. This ensures even cooking and prevents the shells from breaking.
  • Layering is Key: Spreading a thin layer of marinara sauce at the bottom of your baking dish prevents the shells from sticking and adds moisture from the start. Layering the shells and sauce ensures every bite is saucy and delicious.
  • The Foil Trick: Covering the baking dish with foil during most of the baking time helps steam the shells and melt the cheese evenly without drying out the pasta or sauce. Remove it for the last few minutes to get that beautiful golden, bubbly topping.

Variations to Customize Your Stuffed Shells

This recipe serves as a fantastic base, but don’t hesitate to get creative and make it your own! Here are a few ideas for delicious variations:

  • Add Meat: For a heartier dish, brown some ground beef, Italian sausage, or a mix of both, drain the fat, and mix it into the ricotta filling. This adds incredible flavor and substance.
  • Different Vegetables: Sautéed mushrooms, finely diced bell peppers, or roasted zucchini could be lovely additions to the spinach filling. Ensure any added vegetables are cooked and drained of excess moisture.
  • Cheese Swaps: Experiment with other Italian cheeses like provolone, fontina, or even a smoked mozzarella for a unique flavor profile.
  • Spice it Up: Increase the red pepper flakes if you love a spicier kick, or add a pinch of cayenne pepper.
  • Herb Garden Freshness: Beyond parsley and oregano, consider fresh basil, thyme, or marjoram for a different aromatic twist.
  • White Sauce Alternative: While marinara is classic, these shells are also delicious baked in a creamy Alfredo or béchamel sauce for a richer, milder flavor.

Make Ahead and Freezing Instructions

These Easy Spinach Stuffed Shells are perfect for meal prepping! You can assemble the dish ahead of time and bake it when you’re ready.

  • Make Ahead: Assemble the shells in the baking dish, cover tightly with foil, and refrigerate for up to 24 hours. When ready to bake, add an extra 10-15 minutes to the baking time since the dish will be cold.
  • Freezing Unbaked: Assemble the shells as directed in a freezer-safe baking dish. Cover tightly with two layers of foil. Freeze for up to 3 months. When ready to bake, thaw overnight in the refrigerator, then bake as directed, adding extra time if still partially frozen.
  • Freezing Baked: Bake the shells as directed, then let cool completely. Cover tightly with two layers of foil and freeze for up to 3 months. To reheat, thaw overnight in the refrigerator, then bake at 350°F (175°C) until heated through and bubbly, about 25-30 minutes, or microwave individual portions.

Ingredients

  • 1 12-oz. package jumbo shells
  • 4 cups whole milk ricotta cheese
  • 3 cups mozzarella cheese, finely shredded, divided
  • 1 cup freshly grated parmesan cheese
  • 2 large eggs
  • 1 Tbsp. fresh parsley, finely chopped
  • 2 tsp. fresh oregano, finely chopped
  • 15 oz. fresh baby spinach leaves, steamed until wilted and then squeezed dry and chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. red pepper flakes, if desired for spice
  • 3 cups marinara sauce, fresh or jarred

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook pasta according to package directions until al dente. Drain and rinse with cold water to prevent sticking.
  3. In a large bowl, combine ricotta cheese, 2 cups mozzarella cheese, parmesan cheese, eggs, parsley, oregano, spinach, garlic, salt, pepper, and red pepper flakes. Mix well until all ingredients are thoroughly combined.
  4. In a 13×9-inch baking dish or large casserole dish, spread about 1/2 cup of the marinara sauce evenly over the bottom.
  5. Carefully fill each of the cooked shells evenly with the ricotta mixture.
  6. Place 15 of the stuffed shells into the prepared dish. Top with half of the remaining marinara sauce.
  7. Arrange the remaining 15 shells on top of the first layer, and then top with the remainder of the marinara sauce.
  8. Sprinkle with the remaining one cup of shredded mozzarella cheese.
