    Chex Blueberry Cereal
  • 1/2
    cup
    dried blueberries
  • 6
    Tbsp.
    unsalted butter
  • 1
    10-oz. bag
    mini marshmallows
  • 1

    freshly grated lemon zest

    vanilla extract

Instructions

  1. Lightly spray a 9-inch springform pan with nonstick cooking spray. (If using a 9×9 inch pan, lightly spray the pan with nonstick cooking spray. Line with parchment paper, leaving a bit of an overhang on all sides for easy removal. Spray parchment lightly with nonstick cooking spray.) Set aside.
  2. Combine cereal and dried blueberries in a large bowl. Set aside. In a large saucepan, melt butter over medium-low heat. Add marshmallows and stir with a rubber spatula until melted and smooth, about 2-3 minutes. Stir in the lemon zest and vanilla extract.
