Discovering Culinary Magic with Fanny Lam’s “Oh Sweet Day!”
These magnificent red velvet cupcakes are not just a simple recipe; they are a delightful creation from my dear friend, Fanny Lam, and her phenomenal new cookbook, Oh Sweet Day! Fanny is a true inspiration, a culinary artist whose passion for baking shines through in every recipe she shares. I first stumbled upon her extraordinary talent through her captivating Instagram account, which quickly became a source of endless dessert dreams for me and countless others.
If you haven’t yet had the pleasure, I highly recommend you take a peek here. It won’t take long for you to fall completely in love with Fanny’s exquisite desserts. Her repertoire is nothing short of amazing, featuring everything from elegant cakes and charming cupcakes to buttery shortbread cookies, creamy cheesecakes, playful cakepops, delicate macarons, and sophisticated tartlets. Each creation is a testament to her skill, dedication, and innate ability to transform simple ingredients into edible works of art. Her commitment to quality and flavor truly sets her apart.

Fanny’s journey is as heartwarming as her recipes. A dedicated wife and mother, she transformed her lifelong passion for baking into a thriving home-based bakery, making her dream of “Oh Sweet Day!” a delicious reality. Her entrepreneurial spirit and talent have allowed her to build a brand synonymous with quality and sweetness. Her busiest time of year, naturally, is the bustling holiday season, when she meticulously bakes thousands of cookies for her highly anticipated “Oh Sweet Day! Holiday Cookie Boxes.” These boxes are eagerly awaited by her loyal customers, a testament to her consistent quality and unique flavors. Her recipes are not merely impressive in their visual appeal and incredible taste; they are also remarkably approachable, making professional-quality baking accessible to home cooks of all skill levels. This philosophy is perfectly embodied in her easy red velvet cupcake recipe, which combines elegance with simplicity.

Mastering the Perfect Red Velvet Cupcake: Essential Baking Tips and Tricks
Creating truly exceptional red velvet cupcakes involves a few key details that elevate them from good to unforgettable. Fanny’s recipe, while remarkably simple to follow, includes a crucial ingredient that ensures a perfectly moist and tender crumb: buttermilk. The acidity in buttermilk reacts with the baking soda, creating a light, airy texture and helping to tenderize the cake, resulting in that characteristic velvet softness. If you don’t have buttermilk readily available in your fridge, don’t fret! Fanny shares a fantastic homemade substitute that’s incredibly easy to whip up. Simply mix one cup of regular milk (dairy or non-dairy works) with one tablespoon of lemon juice or white vinegar. Give it a gentle stir and let it sit for about 5 minutes. You’ll notice it slightly curdles, which is exactly what you want. This quick DIY buttermilk will work wonders in your recipe.
Another insider tip for achieving the best results with any baking, especially cupcakes, is to ensure your ingredients are at room temperature. This applies particularly to eggs, butter, and buttermilk. Room temperature ingredients combine more smoothly and evenly, creating a consistent emulsion in your batter, which translates to a finer crumb and better texture in the final baked good. When mixing the wet and dry ingredients, always remember the golden rule of red velvet: do not overmix! Overmixing can develop the gluten in the flour too much, leading to tough, dry cupcakes that lack that desired “velvet” texture. Mix just until the ingredients are incorporated and no streaks of flour remain, and then stop.
For an extra festive touch that truly makes these cupcakes shine, I love to sprinkle the tops of my finished creations with Wilton’s beautiful gold edible stars. They add a magical sparkle that’s absolutely perfect for the holidays, transforming each cupcake into a tiny celebration. You can find these delightful edible accents here. These small details can truly elevate your holiday baking experience.

The Allure of Classic Red Velvet: A Holiday Staple
There’s something undeniably captivating about Red Velvet Cupcakes. Their deep, rich color immediately evokes a sense of festivity and warmth, making them an ideal dessert for the holiday season. This striking visual appeal is often what first draws people in, but it’s the taste that truly keeps them coming back. Beyond their stunning appearance, these cupcakes offer a truly exquisite flavor profile. They are celebrated for their incredibly moist and fluffy texture, which melts in your mouth with every bite. The subtle hint of cocoa powder adds a sophisticated depth, creating a nuanced chocolate flavor that’s never overpowering but perfectly present. It’s this delicate balance that makes red velvet so universally beloved and a timeless classic.
But what truly elevates these cupcakes to legendary status is the magnificent cream cheese frosting. This isn’t just any frosting; it’s a velvety smooth, incredibly creamy, and utterly luscious topping that perfectly complements the rich cupcake base. The slight tang and richness of the cream cheese provide a delightful contrast to the sweetness of the cupcake, creating a harmonious symphony of flavors and textures that dance on your palate. It’s this iconic pairing of a tender, cocoa-kissed cake with a tangy, sweet frosting that has solidified red velvet’s place as a classic, especially during celebratory times. It’s a flavor combination that simply can’t be beaten.

With holiday baking season in full swing, there’s no better time to add this delightful easy red velvet cupcake recipe to your repertoire. These cupcakes are not just delicious; they are an experience, a tradition waiting to be made and cherished.
