  • To a blender, add the hulled and sliced strawberries, freshly squeezed lime juice, white rum, and superfine sugar. Blend until the mixture is completely smooth and no chunks remain.
  • Carefully spoon the strawberry puree into the bottom of your popsicle molds, filling each mold approximately halfway, which is about 1 1/2 ounces. For the signature diagonal layer, place the popsicle mold on a baking sheet, then prop one side of the baking sheet or the mold itself with a sturdy book or folded towel. This will angle the molds. Transfer to the freezer and let it firm up for 45 minutes to one hour, ensuring it is set before the next layer.

Piña Colada Layer

  • While the strawberry layer is freezing, prepare the piña colada layer. In a clean blender, combine the pineapple chunks, room temperature cream of coconut, and Malibu rum. Puree until the mixture is smooth and creamy.
