- 1 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 2 1/2 lbs. boneless, skinless chicken thighs, cut into bite-sized pieces
Chicken & Rice Dish
- 1 Tbsp. olive oil
- 1 1/2 cups yellow onion, finely chopped
- 1 cup red bell pepper, chopped
- 2 large cloves garlic, minced
- 1 14.5-oz. can diced fire-roasted tomatoes, undrained
- 1 15.5-oz. can black beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 1 tsp. Hungarian paprika
- 1/2 tsp. ground cumin
- Salt and pepper to taste
