Ingredients for Cinnamon Swirl Bread

  • 1 cup milk
  • 8 Tbsp. unsalted butter, divided
  • 2 1/2 tsp. Active Dry Yeast
  • 2 large eggs
  • 1/3 cup granulated sugar
  • 3 1/2 cups all-purpose flour
  • 1 tsp. kosher salt
  • 1/3 cup granulated sugar (for swirl)
  • 2 tbsp. ground cinnamon (for swirl)
  • Egg wash: 1 egg and 1 Tbsp. milk

Ingredients for Orange Maple Butter

  • 1/2 cup (one stick) unsalted butter, room temperature
  • 1 Tbsp. orange zest
  • 1 1/2 Tbsp. maple syrup
  • 1 tsp. brown sugar

Instructions for Cinnamon Swirl Bread

  1. In a small saucepan, gently melt 6 Tbsp. of butter with the milk. Heat the mixture until it is very warm to the touch (around 105-115°F / 40-46°C), but do not let it boil. Remove it from the heat and allow it to cool until it’s just comfortably warm. Sprinkle the Active Dry Yeast over this mixture, stirring gently to combine. Let it sit undisturbed for about 10 minutes until it becomes bubbly and foamy, indicating the yeast is active.
  2. In a separate medium bowl, combine the all-purpose flour and kosher salt. Whisk them together to ensure an even distribution.
  3. In the bowl of a stand mixer equipped with a paddle attachment, combine the granulated sugar (1/3 cup for the dough) and large eggs. Mix these ingredients until they are well combined and slightly pale.
  4. Carefully pour the milk and yeast mixture into the stand mixer bowl, stirring to fully incorporate it with the sugar and egg mixture. With the mixer on low speed, gradually add about half of the flour mixture, mixing until just combined. Then, add the remaining half of the flour, continuing to stir and increasing the speed to medium, until a shaggy dough forms and all ingredients are combined.
  5. Switch to a dough hook attachment. Knead the dough on medium speed for a full 10 minutes. During this process, the dough should become smooth and elastic. If you find the dough too sticky, add additional flour, 1 tablespoon at a time, until it reaches the desired consistency – soft but not excessively tacky.
  6. Lightly drizzle a large clean bowl with canola oil (or another neutral oil). Place the kneaded dough into the bowl, tossing gently to coat it evenly with the oil. Cover the bowl tightly with plastic wrap and let the dough rise in a warm, draft-free place for at least 2 hours, or until it has doubled in size.
  7. Once the dough has risen beautifully, turn it out onto a lightly floured work surface. Using a rolling pin, gently roll the dough into a large rectangle. It’s important to ensure the width of this rectangle is approximately the same as the length of your loaf pan, and the length of the rectangle should be about 18-24 inches.
  8. Evenly spread the top surface of the dough with the remaining 2 Tbsp. of softened unsalted butter. In a small bowl, thoroughly mix together the 1/3 cup granulated sugar and 2 Tbsp. ground cinnamon for the swirl. Generously sprinkle this cinnamon-sugar mixture evenly over the buttered dough, making sure to cover it from edge to edge.
  9. Starting from the end farthest from you, carefully and tightly roll the dough towards you, creating a neat log. Once rolled, firmly pinch the seam along the bottom to seal the roll completely, ensuring the cinnamon filling stays inside.
  10. Generously spray a standard loaf pan (approximately 9×5 inches) with non-stick cooking spray. Carefully place the rolled dough log into the prepared loaf pan, ensuring the pinched seam side is facing down. Cover the loaf pan with plastic wrap and let the bread rise for a second time, for an additional 2 hours, again in a warm, draft-free spot, until it has significantly expanded and crowned above the pan.
  11. While the bread is undergoing its second rise, prepare the delightful Orange Maple Butter. Combine all the butter ingredients (room temperature unsalted butter, orange zest, maple syrup, brown sugar) in a food processor. Pulse until the mixture is light, fluffy, and all ingredients are fully incorporated. If you don’t have a food processor, you can use a hand mixer or even a fork to cream everything together until smooth.
  12. Transfer the prepared Orange Maple Butter mixture into a small bowl and cover it with plastic wrap. Place it in the refrigerator to firm up slightly while the bread bakes. Alternatively, you can form the butter into a log, wrap it tightly in wax paper, and then refrigerate.
  13. Preheat your oven to 350 degrees Fahrenheit (175°C).
  14. Once the bread has finished its second rise, gently remove the plastic wrap. In a small bowl, whisk together the egg wash ingredients (1 egg and 1 Tbsp. milk). Carefully brush this egg wash over the top of the risen bread. This will give it a beautiful golden-brown crust and a slight sheen.
  15. Bake the bread on the middle rack of your preheated oven for 40 minutes, or until the top is golden brown and a wooden skewer inserted into the center comes out clean. If the top begins to brown too quickly, you can loosely tent it with aluminum foil to prevent over-browning.
  16. Remove the loaf pan from the oven and let it cool on a wire rack for about 5 minutes. After 5 minutes, carefully remove the bread from the pan and place it directly on the wire rack to continue cooling completely before slicing.
