Ingredients  

  • 3 cups all-purpose flour
  • 1/2 cup light brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. kosher salt
  • 1 cup unsalted butter, chilled and cut into small cubes
  • 1 large egg
  • 1 tsp. vanilla extract
  • 3 cups strawberries, roughly chopped
  • 1 1/2 cups blueberries
  • 1 Tbsp. cornstarch
  • 1/3 cup granulated sugar
  • 1 Tbsp. fresh lemon juice

Vanilla Glaze

  • 1 cup confectioner’s sugar sifted
  • pinch of salt
  • 1/2 tsp. vanilla extract
  • 3 Tbsp. milk

Instructions 

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later. Set aside.
  • In a large mixing bowl, combine the all-purpose flour, light brown sugar, granulated sugar, baking powder, cinnamon, and kosher salt. Whisk these dry ingredients together until well combined. Add the cold, cubed unsalted butter. Cut the butter into the flour mixture using a pastry cutter, two knives, or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
